1. Peel 2 large potatoes. Chop the uneven areas. 2. Slice the rest of the potatoes into thick strips. 3. Place the potato strips into a bowl. Set aside then pour in water. Soak the sliced potatoes for 30 minutes. 4. After 30 minutes, drain the water from the potatoes, then run them under tap water to wash them again. 5. Boil a pot of water, then add the potatoes. Drizzle with a tablespoon of salt. Then continue boiling for 5 minutes. 6. After 5 minutes, drain the water from the pot. Then run the potatoes under tap water (or cold water). Place the drained potatoes on top of a paper towel. Then pat dry. 7. Place the potato strips inside a plastic bag. Add two tablespoons of cornstarch. Close the bag, then shake it for the potatoes to absorb the cornstarch. Shake off any excess. 8. Arrange the potato slices into a food container. 9. Prepare the sauce. In a pan, heat 20 grams of butter on low heat, until it melts. Add half a tablespoon of flour, mix well. Then add half a tablespoon of chili sauce or chili powder. Mix well, then add 120 ml of milk. Boil on low heat. Add six slices of cheese- preferrably by threes. Cook until the cheese melts and the sauce thickens. Then pour into a bowl and set aside. Top the sauce with chili or dried coriander. 10. In a pan, heat some oil. Take out the prepared potato fries from the refrigerator. 11. When the oil is 50% hot, drop in the fries, and fry over medium heat for 2 minutes. 12. Use chopsticks to flip the fries over. Continue frying for 4 minutes more. 13. Take out the fries from the oil then let cool. 14. Increase the temperature of the oil. Pour in the potatoes once again to comtinue frying. 15. Flip the potato slices over using chopsticks, then continue frying for 2 minutes. 16. Fry until the potato slices are golden and crispy. Drain from the oil. 17. Serve the fries with the prepared sauce.

Anyone try making these yet? Just wondering if the crispness is on the outside only & if on inside is soft- the only way I would like them. Crispy all the way through- no thank you.

I have been boiling all of my fried potatoes for years and years. I’m from South Georgia, USA. People ask me all the time how do I get my potatoes so creamy on the inside and crunchy on the outside. I always tell them it’s a family secret! 😂. Now everyone knows! Lol

I do the exact same thing~!!!! But I use a version of a court bouillon for the billing water. I boil several cloves of garlic and an onion in salted water until they begin to fall apart in the water. I strain the water and that's what I boil my potatoes in. I don't however soak or rinse the potatoes. I want that starch on them to make them crispy. Oh I LOVE LOVE LOVE your channel

看了您的视频,我第一次炸薯条成功了,谢谢。你说薯条一次可以多做点,放到冰箱里冷冻,按照你的方法做了,但从冷冻柜里拿出来炸,炸不了,放进油锅里薯条会出水,变软,为什么,请指教。

如果切得大小不一,边边的位置 瘦长不饱满,炸出来口感一定较硬 所以厚度一定要有才好吃的
