Red Beet Eggs
1/2 cup white vinegar, 1/2 cup sugar, 2 cans red beets with juice, 10 hardboiled eggs. Combine and allow flavor to mingle before eating.
Potato Leek Soup:
2 large leeks, 6 large potatoes, 6 cups Chicken Broth, 1 Cup Heavy Cream, 1 can cannelini beans, 2 cloves garlic, 6 tablespoons butter, salt and pepper. Toppings: bacon, chives and cheddar cheese
Cobbler:
Batter - 1 cup flour, 1 cup sugar, 2 tsp baking powder, 1/2 teaspoon salt, 1/2 cup milk, 1/2 cup butter, 3 cups fruit or pie filling. Melt Butter, combine everything else in bowl except fruit. Add batter to melted butter and spoon fruit or pie filling on top. Bake uncovered at 350 for 35-40 minutes.
Halupkis:
18 cabbage leaves, 2 lbs ground beef, 1/2 c onion, 1/2 bell pepper, 2 eggs, 1 tsp Parsley, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper. Sauce: 28 oz tomato sauce, 1 can tomato soup, 2 cans diced tomatoes, 2 tbsp Sugar.
Mix filling and assemble halupkis. Spoon some sauce into baking pan, add halupkis, pour sauce over top to cover. bake at 400 for 1 hour or until internal temperature reaches 165 degrees.
Crepes: 2 eggs, 2 tbsp sugar, 1 tsp vanilla, 1/2 tsp salt, 2 cups milk, 1.5 cups flour, 1 tsp baking powder. Grease hot skillet. Keep over medium heat. Add scant 1/4 cup batter to skillet and coat bottom. Flip after edges get brown, about 30 seconds.
Filling: 1 block cream cheese, 1 tsp vanilla, 1/4 cup powdered sugar. Serve with fresh fruit and a good protein.
Ranch Chicken:
1.5 lbs chicken breast, 1 cup chicken broth, 1/2 cup milk, 1/4 sour cream, 2 tbsp ranch mix.

I absolutely love your channel and there hasn’t been a bit of content that I’ve not enjoyed. I think your content is gonna be kind of seasonal, so don’t stress about it. When that garden comes in, you’re going to be working in the garden and canning primarily, and that’s OK by me. And then in the winter with nothing much going on, the cooking videos are tremendous. But mixing it up is always good too. You do you, and I’m sure everyone will be happy with whatever you produce. That chicken looks amazing and I can’t wait to try your sauce recipe. I was married to a man from Pa Dutch country for 30 years and his step mother taught me to make red beat eggs, chicken pot pie with homemade noodles, pepper jelly, halupkis, canned red beats and so much more! I love your channel it brings back fond memories!

Try coating your Brussel sprouts with bacon grease instead of olive oil and putting brown sugar and caramelized onions with them.

Great looking meals!! When I am making extra casseroles I line the Pyrex with plastic wrap, fill the dish and freeze. Once it is frozen I take it out of the pan and wrap it well , label it and put it back. On the day I want to cook it I unwrap it and put it back in the dish to thaw and bake. I use the same four Pyrex over and over and my "Pyrex shaped" casseroles stack so well in the freezer and don't take up so much space. It's just the two us so one recipe make two meals and I usually double it and get four.

I love all of your videos. I would love some budget meals that are from scratch. Too many budget cooks on RU-vid use processed foods. I think that food can be made cheaply without coming from a box or a factory. ❤

My husband loves halupkis! Little tip - If you core the cabbage before you boil it the outer leaves fall away easily. We also like to use the inner leaves to make halushki at the same time.

I’ve heard people say that if you freeze the whole head, it peels easily too. I’ve never tried it but thought I’d pass it on 😊

@@meggo6673 i didn’t love the texture of the leaves freezing it. I felt like it had a rubbery yet slightly mushy texture. Maybe I didn’t do it right though.

Great recipes, Kelsey! I want to try your cabbage rolls, the potato leek soup, and bread. They all look so warm, delicious, and comforting. I used to make cherry cobbler when my children were little. I would get cherries from a market in Bucyrus, OH and can them every year. They were so yummy. My oldest granddaughter still loves making my cobbler. It's a great dessert especially with vanilla ice cream! I love watching bread making because I don't do that much anymore. I make sweet breads, but haven't done much with yeast breads. I loved your video on all the different kinds of breads you made a while back. Honestly, I love all homemaking things and gardening things (although I can't garden anymore). I think these skills are so valuable today. If I was young again, I would totally do what you are doing...building a homestead with gardening, canning, freezing, and all of that preservation stuff. You and your husband are very wise in building your homestead. You are a wonderful homemaker and mother. It's so nice to watch and listen to someone who has such high values for family and home life. I miss the days of young children under foot and their playfulness and laughter. Thanks for sharing your life with us! Have a great week and look forward to seeing you again soon!

I am also from PA, moving back in 2 months. Red beet eggs are a staple for sure. I can my beets with the vinegar and sugar that way all we have to do is cook and peel the eggs and throw everything in the jar with no extra work. My mom did this growing up too. So much easier.

I’m new to the channel but I love being able to get motivated or inspired with meal ideas (I’m that girl that has a gazillion cookbooks and makes the same 5 recipes on repeat these days 😝). For me, since we weren’t blessed with tiny humans I’m most interested in the content about the garden (finally, a fellow PA gardener who has to deal with humidity and Japanese beetles and things 😆), preserving, make-ahead meal prep, bread making (especially sourdough discard use ups if you do them) and most especially, how to use the foods and ingredients we can / put up. I didn’t grow up canning so while I’ve got that part down, I don’t find myself reaching for much that I’ve preserved or don’t try things I’m not sure about because I have no idea how I would use it.

I live in Ohio and my mom always canned pickled beets and would make pickle eggs in it for holidays. I love pickled eggs!! Lots of Amish and German heritage in Ohio too.

I love, love, love your channel. Listening to your calm way of being, and your content, is a great way for me to relax while I prep in my kitchen. I so enjoy your cooking and gardening, as both are of high interest to me. I realize I mentioned before I serve 24 children daily and my goal is to not only provide great nutrition, but teach them a way of living. I garden, cook, and preserve food with them. All of it! What I enjoy about the what I make in a week videos - even when it’s repeat recipes - is the newly refreshed inspiration for my own very tired meal plan brain. Working a full time job makes the homemaking a little bit harder (but it’s what I truly enjoy I don’t like letting myself see it as a burden - but sometimes you just can’t help it). I appreciate seeing your content as it is. I really extra like when you share recipes that are dear to you. I’ve already picked out a few to bring into my home. Q&A is fun, I like it but understand they’re not for everyone. When families like yours share Q&A I appreciate just knowing it’s possible - being a full time homemaker seems so out of reach for us. We will get there eventually - but it’s nice to see the how-to of it all. Of course, only sharing what you’d be comfortable with. For myself, I appreciate your content - but you are what makes your channel special. I said the same thing in a comment to Becky on Acre Homestead - we love what you bring.. whatever that may be!

I'm from NJ and had never heard of red beet eggs. I went to college at Millersville and discovered them- fell in love! I only get to have them when I go to PA which hasn't been in years. I need to make some :)

I miss pickled beet eggs from my childhood. My family is from Wisconsin with some Pennsylvania Dutch and aways had these but I grew up in CA and my parents still cooked from that region.

31:28 I was surprised to find out that honey, lime & salt, with optional additions of toasted walnuts, crumbled bacon, &/or crumbled blue cheese or chèvre, is also a really good flavor combo for Brussels sprouts.

Just found you from a YT suggestion since I watch Jessica from Three Rivers and I have been binge watching your videos! I am from/in PA as well❤❤. Hubby and I homesteader on 1/3 acre in a neighborhood for 16 years until 2020 and found a little over an acre and we are loving it. Hang in there what you are doing, is totally doable on 1/4 acre!

We love Golabki. My gram taught me to grind up some ginger snap cookies and add them to the tomato sauce. It sounds weird but trust me, it’s sooooo good. I’m enjoying all your videos so much!

I really enjoy your videos. I definitely want to try your parsnip fries. My Grandmother use to grow parsnips. I don't recall what they taste like but when you said you like even better than carrots I really need to try. I love carrots I love crepes and didn't have a goof recipe for the filling but now that's to you I do. I enjoyed all your recipes. Thank you

No added noise sounds great!!! I like the cooking. Can you do a home tour of just the main area of your home? No private areas. Also, budgeting and the occasional day in the life. You always have great videos!

We do pickled eggs using pickled beet juice. We also call the cabbage things cabbage rolls.

I struggle with actually doubling or tripling recipes amd freezing for later. I too want to make the most of my time, as i work part time. Keeping my kids fed and nutritious, homemade food in season is important to me. I look for ways to preserve what i find on sale at local stores. Your recipes look delightful. Blessings!

I find your videos to be encouraging and inspiring, neither are words that you used to describe what you’re hoping to do. Sharing your ideas, recipes, and garden, successes and failures, are educational, but also encouraging and inspiring to those who watch your videos. A little of all those things is real life, which is what you’re sharing with us. I appreciate the peaceful and calm content that you put out and actually really enjoy the variety along the way. Its fun to see what others are doing in their gardens all over and then how they are preserving their harvest and recipes used. Just today I found your recipe intriguing for the brussel sprouts and even the hard boiled eggs. I’m a super simple eater and bless my husband’s heart he has a much more adventurous spirit when it comes to food so he ends up being the recipient of new food options when I’m watching some of my faves on RU-vid, you being one of them. Anyway, you are a breath of fresh air and a blessing to this Grammy for sure. And I would love a Q&A! Thank you for sharing your adventures with us! 💕

I know that cobbler as "Creeping Crust Cobbler" - so good. I'm trying to cut out sugar and carbs, so I think I might try making it with allulose for the sweetener and a substitute keto flour mix I have for the flour.
