I take one whole rabbit and completely debone it, then make a truly decadent stuffing, of 5 types of mushrooms, pistachios and beautiful Lardo, ( cured pork back fat), a truly amazing and luxurious game dish.Enjoy

Scott you are something else, this meal is so crazy it puts most youtube cooking videos to shame. This is some real --five star cuisine, I can only imagine how much this would cost in a fancy restaurant, thanks for showing us how to make it!

When I was a kid I used to go ferreting, landing and shooting for rabies etc but never really ate them. Not unless my parents or friends parents made an over cooked sloppy rabbit stew. Needless to say the field spots passed me by when I went on and got a job. I now watch this channel and wait for every video that comes out and it inspires me to go out and take up my old passion and catch and cook. I cook all the time anyway and I'm a big fan of Scott's but I this video really borough some memories backend I think I'll be buying a hutch and a couple of ferret kits tomorrow and contacting my old gamekeeper friend. So refreshing is this channel that I've started butchering my own side of pigs and now I'm going back into the field (by the way... My girlfriend is a vegetarian but I don't think that'll last much longer)

such an under rated wild meat we have available here in the uk. a lot of hassle but by fair the best thing I've ever seen done to one. looks absolutely delishious. Nice 1 again Scott

I've found that aging a fresh rabbit for 3 days in the fridge makes the rigor release and it is much more tender when cooked. Also rabbit liver is to die for. Much better than chicken liver.

Here in the states, those fresh mushrooms you used would be called criminis. They let them grow to about 6" diameter and then they are called portabellas. I've always found it to be an interesting example of a single ingredient being "re-branded". In our area of northern California, a whole farm rabbit is about 35 bucks at the fancy stores. We raise our own, and I will definitely try this sometime.

Finished product looks amazing, man. Unfortunately I don't get to have rabbit too often, only when we travel across the states to the Midwest to visit family. My uncle is a game hunter and makes amazing rabbit and deer meals. I'll have to show this video to him for the next time we go.

Nice Job Scott. I am going to shoot the next rabbit I see while hunting and I am going to make this for sure.... Love the deboning techniques, I have been doing that for a few years when buying cuts of meat. Debone them and you can shape them and stuff them and they cook evenly... Keep up the good video!

I've deboned a lot of different things but rabbit has always been in my mind something that you just have to deal with bones! Gonna head off and get a rabbit just to try this out! Keep up the good work. Shall send a custom knife to you one day that will hopefully get used in a video.

OMG you are MAGIC! I tried my best.... but my rabbit came out in just a few more than 3 pieces hahaha more like 200. I"ll just have to watch more and keep practicing. This was my first successful hunt so i'm excited to keep practicing till I can get it down as well as you have it.

Hey Scott, I would love if you could please make a video on aging meats. Here in the US, it's deemed a health hazard and isn't isn't a well-practiced method-yet, I see chefs like you and Ramsay aging meats for a little bit of time. I am starting a meat rabbit hobby and would love an informational video on how to properly age the meat and for how long. Love your videos!

The summer is a double edged sword for rabbits. There's lot of them about and you can see them because of the light evenings but they are in poor condition compared to the winter time.
