I really like your show. I am German and I am a professional chef and ( home ) sausage maker. I worked with some really good british chefs, like Garry Rhodes, whose style I always admired and I worked in the UK twice. I always thought that traditional british food is on par with everyone else in europe and I consider you an excellent ambassador to british food.

I give you a huge thumbs up and a virtual hug from California, not just for the great recipe, but for the fact that you obviously love Keith Floyd as much as I do. I miss him so much, thanks for keeping his memory alive!!!

I actually made this recipe for dinner tonight and it was soooo so good. First time I've ever worked with rabbit or eaten it actually. The only problem is, being American, its nearly impossible to get suet here, so on the recommendation of a couple other websites I used grated frozen butter for the crust. It still tasted wonderful, thank you so much for sharing this recipe and being so thorough with the recipe details.

I used to only skin the back half and removed the legs and the 'loin' then left the rest for the farm dogs. We had many bunnies, so the front end wasn't worth the trouble. I used to give them to anyone who asked, there were so many and killing them was just another chore.

I love rabbit, probably the nicest, sweetest, tastiest meat I have ever had and I’ve tasted everything you mentioned in your introduction and the more exotic like crocodile, ostrich, kangaroo..... I can also dress any game, only yesterday my daughter (30) was saying she remembered learning how to pluck a pheasant or skin a rabbit by watching me do it. It’s nice to eat a fresh, free range organic piece of meat that lived a natural, happy life, and occasionally spit out a piece of shot. I always cook up the kidneys too, yummy. Gorgeous food.

This brings back a lot of fond memories, Scott. I brought home quite a few rabbits when I hunted "small game" in Pennsylvania. The primary target was pheasant, and we wouldn't attempt to take rabbits until late in the afternoon if we hadn't filled our limit in birds. That happened often enough to enjoy hasenpfeffer as a part of many game dinners during and after the season.

Delicious. When I was growing up the front legs were for the kids. Back legs for dad and the saddle for mom. When I raised meat rabbits butchering 12 to 20 in a day was plenty of work.

There's no need to sift the flower anymore. This procedure used to be necessary when wheat was milled by stones because it was not uncommon to find bits of rocks, and even whole grains in it. There are anecdote of Romans breaking teeth because of stones in the bread. Nowadays, you need only to sift the flower if you live in a very humid environment in order to remove lumps formed by humidity.

I so wish you showed the gutting, so people are aware of the tainting. regardless, this brought SO MANY MEMORIES of my Maltese mother-in-law!! she was a fabulous cook, and expert at hare! she had an old malt guy down the street who would raise/sell them to her for so cheap, a very humble/kind gent. her stew was beyond perfection. thank you for this video, as I loved her here so much. (this was in "corktown", in the early 80's, in an old nieborhood near old tiger stadium in Detroit)
