Watercress (Nasturtium officinale) is a delicious wild edible (if you like things spicy!) that can be found into early winter and very early in spring in Wisconsin. As with all wild edible plants, make sure of your ID -- and it's advisable, as a general rule, to harvest watercress only above the waterline.
This is filled with nutrition, filled with flavor, and a versatile green that you can use in a myriad of recipes!

I got a special memory with watercress. I was out in the woods in germany to collect plants for a school project. It was a hot summer day and the moment I arrived in the shadows I wanted to drink something. But the Icetea I brought with me had alredy been opened and spoiled in the heat. I already wanted to return back home without having achieved anything. But then I found a lot of watercress. It was the first time I saw this plant but with the book I also brought with me, it was very easy to identify and to be sure that I can't confuse it with a poisonous plant. So I ate a few hands full of watercress to help my waterlevel and felt instantly refreshed. I was just about 30 minutes from home, but that moment felt to me like the watercress was my lifesaver.

Kenton, your "little girl" is growing up. Great outfit and great video. My "little girl" turns 46 at the end of this month. I first encountered watercress in the Rocky Mountains, Idaho if I recall. We picked it from a stream not far off the highway when taking a break while traveling, but then I found it in a local supermarket in that area. Sadly you won't find it in Texas. I assume it is a cooler weather plant and I'd assumed a more alpine climate in general, but now I will need to look that up. I agree with the other replies: that meal loked GOOD. Best to you all, Michael from Texas
@ReWildUniversity
@ReWildUniversity 9 месяцев назад
Michael, so glad it looked delicious! And how fun to think of our little girls someday being adults with so much life experience behind them as yours. Yes, I think it's more of a northern plant. Definitely broad-ranging in its range though -- we typically find it in low areas where there is spring-fed water moving. Sending you love from all of us in Wisconsin! =)

Great video! As someone who also enjoys the wild mustards, this was a treat to watch. We have Hairy Bittercress here in Maine where I live, and it is a nice treat to find, given its mustard-like spiciness when consumed. The Cress that I have found here locally also seems to have a different leaf structure; more lobe-like and tending to be smaller than the ones featured in this video. On a side note, last year in our garden at home, a variety of wild mustard grew out of the soil that we had brought in (the cruciform yellow flowers gave it away), and made a excellent nibble whenever I was out tending to the plants.

@ReWildUniversity 9 месяцев назад
So glad to hear that you love that family as well -- the mustards are so delicious! We too have a variety we harvest -- and a new one we found this summer that we haven't ID'd yet that is super spicy!

@@ReWildUniversity They really are delicious; so glad to have learned more about them this past year! That's really cool that you found a new variety, do you have any ideas as to what it might be?
@ReWildUniversity

I think it's black mustard, Brassica nigra, but I'll have to do a positive ID when it's up again next summer =)

Sounds interesting, and a good add-on herb! That tangy and spicy muffin sammich looked SOOOOOO good. 23 o'clock and now I want a snack LOL. Here, there are a few greens you can find in winter. Watercress is one, along with dame’s rocket, garlic mustard, and cleavers. At least, in this weird winter. A very good recipe is these greens boiled together with wild parsnips and water, eaten as a soup.
@ReWildUniversity

A weird winter indeed! We can still harvest waterleaf up here, and yes, those cleavers and the whole Galium family seems to be thinking it's still summer! =)
