Hello, and welcome to my channel! I'm a food writer, recipe developer and trained chef, and my mission is to help busy cooks get wholesome and delicious meals on the table any night of the week. All of my recipes are naturally gluten-free. In this video I share my own personal story and what led me on this path.

Thank you for all of us who have developed allergies to gluten. I got thyroid autoummune disease and got leaky gut with allergies and sensitivities to eggs and tomatoes and limit dairy. I use coconut and almond milk. But i still eat ice cream although i shouldn't. I have coconut yogurt.

Because of my genetic metabolic disorder, I'm lactose intolerant & gluten intolerant. These meals & snacks are pure heaven. Thanks! ❤

Something else you should share are kefirs. They are simple, nutritious, and the flavored ones almost taste like milkshakes. Kefirs are only now starting to be discovered in America. Its history as kumiss, a ancient mongul drink from horse milk, has been modernized using, cow and goat milks. The plain product is make at room temperature too!

I love your channel! I'm gluten free AND dairy free and would love to see more recipes that would be appropriate. I too have just been diagnosed with Chronic Lyme and love that you are providing such tasty alternatives amidst a strenuously time. Thank you.

Thank you for all Nicki - such a wonderful video! I really appreciate your delicious recipes. I try my best to keep gluten as well, as I have Hashimoto's. Sometimes difficult because I also have allergies to peanuts, tree nuts, sesame, coconut and shellfish. I'd love ideas for gluten free recipes minus these ingredients - if you have any of course. I am always looking for alternatives to almond flour and all else I am unable to use. In the meantime, I try substitutes that sometimes work, and sometimes fail greatly!! Great learning experience - and your recipes as they are help to inspire me!

A lot of people are gluten intolerant due to the fact that our wheat is heavily sprayed with glyphosates….unfortunately. I use Italian flour straight from Italy and most people that are gluten intolerant can eat Italian flour no problems at all… you might try if you haven’t already. 😊
