I made this today , even though I m familiar with cake roll process, I found my cake is so heavy and the batter was very thick when I combine the blended egg white. I had to double te recipe because I have a larger pan . My cake comes out so dense and not rise as fluffy as my pandan cake roll I think next time I would use the cake flour in lieu of A/P flour to keep it on a lighter side The smell was so great !

Hello Michael, You have such wonderful desserts, I would like to know how you got your start and your interest just in the baking of desserts or do you cook entrees as well? My dream would not to be as classic as you, I don’t think I have that much time. I would really just be quite be happy doing what I was known for and that was being THE COOKIE LADY. My group where I worked in the hospital always knew they could count on me for a variation of some type of chocolate chip and ...cookie that I would come up with and they always loved them. The same idea with typical Oatmeal cookies were never typical! The phrase “Less is more” well, that never fit in with my cookie recipes even though it didn’t always need to be a lot more ingredients. People would ask me, “ don’t you get tired though just from work and then you go home and start baking, that has got to wear you out.” Well the job I had was very high stress in a hospital laboratory and I loved it, not the stress but helping people. That is what I am put here to do if I can. The Baking is fun and so relaxing And takes the stress off of me. I would love to have a Cookie Bakery and let parents bring their children in for Birthday Parties and let the mom or dads pre-order special designs that I can offer and let the kids Frost the Cookies themselves, then the parents can take the children home but don’t have the mess to contend with. They can all have milk too! I would like to have special things to celebrate holidays of course and bring some old time recipes back as well as foreign recipes as long as I can get the ingredients or substitute ingredients. I have a lot on my plate so any advice would be great and much appreciated. Thank you very much and thank you for all your delicious desserts. Best Regards, Jill

Mr. Michael, I really liked this recipe coz I like very much recipes with almond flour. But I have one doubt: there is no chemical yeast on it? I think that is why the recipe has much more eggs than usual and in order to make fluffy this marvellous cake roll. A I right? Thanks.
