These are the closest thing I've had to high carb tortillas yet. They're easy to make BUT they're a bit time consuming because of rolling them out.
I believe this recipe was originally by Joe Duff. I cannot guarantee that as I first saw the recipe via a screenshotted image on Pinterest.

INGREDIENTS:
- 2 cups (200g) Almond Flour
- 2 tbsp Xanthan Gum
- 1 tsp Baking Powder
- 2 Eggs
- 2 tbsp Water
- Pinch of Salt
METHOD:
1. In a large bowl, mix ALL ingredients together. Once well combined, wrap the dough in cling film/plastic wrap. Knead the dough for at least 2 minutes (this helps the xanthan gum bind the dough). Set aside at room temperature for 15 minutes.
2. Once rested, split the dough into 8 even balls. One at a time, take the dough balls and roll them between two pieces of parchment paper until they are about 1/4 inch thick and about 6 inches wide. Using a small bowl as a template, cut them into small circles. And use the spare dough of all 8 balls to make another 2 tortillas.
3. In a large pan, over medium heat, dry fry until the top has gone from yellow to white and the bottom is browning slightly. Flip and cook for FIVE seconds - DON'T do it any longer otherwise they'll be hard and not flexible.
Set aside and repeat step 3 for the remaining tortillas.
4. Enjoy with any keto filling!
