Leigh Anne, this is a great recipe! But I wanted to tweak it a little when I made it. I substituted the 2 tablespoons of flour for Almond Meal, I didn't have to add any more liquid. I mixed the almond meal in with the flour. Topped the muffins as you suggested with almonds, but sprinkled a little sugar on them before baking, making the glaze unnecessary. These are so good, I can't wait to make them again. Thanks for giving me the "jumping off" point! ❤ Love your channel!
I was just going to ask in the comments about lemon muffins, but you covered it!! Thanks Leigh Anne, love all your recipes, especially how quick and easy they are 😃
lol I have left two comments and deleted cause I goofed...was saying blueberry muffins then chocolate chip muffins only to realize I have made your small batch cc muffins some time last year. How did I forget lol? They were AMAZING. looking forward to trying the blueberry recipe next and checking out some others. Thanks for sharing your gift of cooking.
@@LeighAnneWilkes Personally I'd love another muffin month....also, after brainstorming with my sister, we thought of mini pies (mushroom, onion...) or mini quiches, or soft fudgy cookies. Hard question, since muffins and brownies are such tough acts to follow
I love almond as mentioned in an earlier video you did. I'm thinking dried cranberries or dried cherries might be a nice addition. Also, , I have the beginning of lemonade using lemon peels and sugar and letting them sit overnight then melting the sugar in a little bit of water, so I was thinking of using that to replace some of the milk when combining with the batter. I also have lemon extract so that with the lemonade starter maybe I could make lemon only flavored muffins, but also make a second batch using the almond and the lemonade starter.. I think it should come out pretty well.
