Indian vegetarian food is about the only vegetarian food that I enjoy. And this looks a cracker - quite simple but delicious. Looking forward to the puri video. I last had them in Malaysia serval years ago.

Why not just use the boiling water from the potatoes, it’s already starchy, so will help thicken the curry better than fresh boiling water?

looks lovely must try this , one thing if you used the water you boiled the potatoes in it would have had some starch in and helped thicken up the sauce.

I love that you show us the dish at the beginning of the video… it inspires me!! We have soooo many fresh tomatoes coming ripe from our greenhouse right now so the timing of this video is amazing. Our garlic and onions are drying, got potatoes and cilantro in the garden… I am ready to make this dish today😃. If you have a greenhouse, consider buying a curry leaf plant (can be grown from fresh seed, but is best propagated by a cutting). It doesn’t like it too cold (but you have a greenhouse), not does it like very strong sun. Also, if you get your hands on some leaves, this is one that freezes very well. Rinse, dry and freeze. Can toss frozen leaves into oil, and while fresh is always better, frozen is pretty darn good too.

If you don’t have curry leaves, just leave them out. They don’t have a strong flavour. I

Chetna: I want to get a chance to let you know that the flour you recommended for chipatis (atta) is difficult to find in the US. What I have found is that the product King Arthur Whole Wheat Organic seems to be very close and a reasonable substitute. It has 13.8% gluten and the chipatis have a nice chewy texture. I made it for some friends who were very skeptical about Indian cooking to accompany some (very mild) curry and they raved! I love your videos, and I've tried several different curry recipes and they remind me of my grandmother's cooking. She was American born but lived in Kashmir during her adulthood, and my father was born there. Carry on, sister!

Depends on where you are, John. I find ‘atta’ even in our local Costco, and it’s priced more reasonably (at Costco or the Indian grocery stores) than the King Arthur flour.
