I would like to have seen more about how the dough is processed. Croissants require many layers with butter or some other fat between them before being cut and baked. The video doesn’t even hint at that.

I work at a different plant that makes bread. At our facility machine slices, bags, and codes the bread without ever needing to be touched and at a much faster rate. Not sure why they are doing it by hand here other than complexity and expense. Either way, gloves are a must!

That whole production line should be tossed because of workers NOT wearing gloves and handling the product with their BARE HANDS.

Thats because europe has better hygine procedures than the USA so very few food preperation places use gloves. Regular hand washing is more hygenic.

Not needed in Europe. People here just wash their hands. Besides what's up with all this germ fear in the US? People are touching dirty things all day long like pin devices, traffic light buttons, doorknobs and other people's hands, but got all whiny if someone touches their food with their bare hands.

OK, OK... It's a breathtaking state-of-the-art equipment for bread processing. High sanitary care during production...However, it's only shocking that workers handle the bread and pack it with bare hands at the end of this whole perfect process ( see 8:08 ) !!!! Have the foremen seen this ? 😵 Masks are important but they don't ensure hygiene alone !!!!
