if you walk into a chinese restaurant and its your first time there.then you should order fried rice,depend on the fried rice,you would know the skill of the chef
this is the reason why i love chinese/taiwanese food. they only cook your food after you order. you will know that it's freshly cooked. most of the chinese/taiwanese restaurants i know.

the reason the water is left running is because of all the heat, the "needed cold" water would be warm, thats why he tossed it at one point. I used to think it was a waste until I was told the reason.
They use it to blanch the vegetables after pre-cooking them in hot water and also to clean the wok. The wok is a very nice cooking tool. I cooked with one for 10 years of my life and the one you use becomes personal to you.
He has mastered the art of wok, water and extreme heat and speed. The critical skill being heat management by all the tools and skills at his disposal. Marvelous art.
Incredible wok skills. Need dexterity and fast hands to work in that high temperature kitchen. Not easy to dish out one tasty dish after another while heat is sapping the energy. Kudos.

Nice wok skills. Lovely dishes. A question though. Where does all the water from the overflowing vessel go to? Is it really necessary to have the water flowing all the time? 🙂
@@Daniel-ld7xs I am laughing at you thinking that this is skillful , I don't consider myself a chef but even I could knock this together, It will appear skillful to you because you buy cheap oriental ready meals from ASDA and heat them up in the microwave!
Jedes einzelne Gericht sieht für mich fantastisch aus. Gerne würde ich hier ähnlich einer Tapas Bar jedes einzelne Gericht in kleinen Portionen kosten und mich an der Kunst des Küchenchef erfreuen 👍
