This Amish Canning series is the result of an interview that I had with an Amish woman and her family. In this video you get to meet Susie and see her water bath/ Open kettle pantry! Keep in mind that some items and canning technique's in this pantry would be considered NON- USDA approved. So please do your own research!
It has been an absolutely pleasure and gift to know Susie and all her amazing knowledge!
Please know that all of these Amish recipes and techniques (concerning canning things that would normally be pressure canned) are considered REBEL canning recipes and are NOT USDA approved!!! Therefore using the recipe at your own risk. Please do your own research and decide what is safe for you.

I got a really good deal on some carrots, and I am wondering can I water bath them raw with just water. I used pints and is 60 minutes long enough??

There was an accident near my home and an Amish family was involved. The town and surrounding towns helped with donations to help with the bills. It was truely a beautiful come together!!!!

That was a great look into the Amish pantry. A lot of what Susie does is also done here in Germany: the fruit juice with the steam juicer without any sugar, and then only hot sealing. the pear juice that year was so sweet that it had to be diluted with water to drink it. I also always use new rubber rings for my weck-jars for meat dishes and I cook beans and carrots in a water bath for 2 hours (without vinegar). This year I made pear butter using an Amish recipe. I think it's great what you're doing. Keep it up and don't give up.

Loved the tour of Susie’s pantry. ❤️ My parents left the Amish church when I was 3 but we had great connection with extended family. Since PA Dutch was my first language I smiled when I heard her conversing with her son. ☺️ And what she called ‘jam’ we call grape mush, except we make ours with the juice and not whole fruit. And to put that on angel food cake is amazing!

This is wonderful. Meeting Susie was the best thing you've done. Not everyone can be instructed by a lady who has followed decades of methods and recipes and is showing you how it's done. People who know what they are doing love to pass on their knowledge. BTW, I love how your white teeth match the white of your eyes and your black hair shines in the sunlight. No, I'm not weird, I'm an old lady of 73, remembering when I was that girl. Sniff, sorry. Don't be browbeaten by the canning police, people have been preserving food in this way for generations.

I love water bath canning, and I ignore all the nay says. My friend is 93 and she helped her mom can growing up. They never pressure canned anything. She encourages me daily. Thank Miss Susie for sharing her pantry with us.

It's not really a thing outside of the US anyway. We don't have pressure canners and have to import them from the US if we want them.

I live in an apartment, and I had been so hesitant about canning because I did not want a pressure canner. Your channel has changed my perspective, and I am eternally grateful. I appreciate you and your journey. I am so glad you have Susie and that she has been willing to share with you while still being respectful of her beliefs. I hope you keep this channel active for a long time. I hope that you can ignore the naysayers and focus on the positivity of those who want to learn from you. The road for those who are chosen is narrow!

Why are you scared of pressure canning in an apartment? They're not noisy--they just jiggle and sashay. Get a 16qt Presto or a Carey/Nesco 9.5qt electric. Nothing to be scared of.

I am 66 and have waterbirth caned all my live. I got a All-American presser canner 4 yr. ago. I have not used it. FEAR. I bought an all American canner this year and absolutely love it. It is reassuring to have the dial to watch and the lid can't possible blow off. It just looks menacing but is my very favorite canner of all. Water bath canning is great and Suzie's methods are tried and true. I just don't always have the extra time to do it that way. @@mrssperry6562 Water bath canning is having your canned goods covered with an inch or two of boiling water. You start timing when the water is full boiling. When the time is up you take them out. Don't get frustrated. If you have more questions I can help. I do both, water bath the high acid foods (tomatoes) and pressure can meats and potatoes and veggies.

I was so afraid when I first used my pressure canner. I had one hand on my kitchen door handle to bolt out the door. Not lying! Now I laugh at that. If you have an All American canner it really is fail proof. Just search what your altitude is. If it is above 1000 then your weight needs to be at 15. If it 1000 or less then the weight is at 10. Double check though. Just ask mr google pants "what is the altitude of......(what ever state) Then you want to watch the gauge dial. When it gets up to pressure the WEIGHT will start to jiggle. Then you turn down your heat until it jiggles about 4 times per minute. You can even ask Mr. Google pants what the pressure gauge needs to read for your area too! Always remember if you cold pack your jars then the water in the canner needs to be cold. If hot packing then you need to have hot jars. I put mine in the oven at 225 for 10 or so minutes but make sure jars are hot when you add hot product. It WILL NOT BLOW UP!!! You will notice a rubber nipple on the canner. If that pops up you ARE in trouble. Turn off the heat. But...it won't happen if you get the jiggle of the weight to jiggle about 4 times per minute. Remember....the weighted gauge prevents the pressure from building to dangerous levels. So once it jiggles monitor your GAUGE usually around 11lbs of pressure. Guildebrook Farm (earlier video's) were excellent. She explains it and so does Homestead Heart. Homestead Heart doesn't use an All American canner though. But the concept is the same but All American canners have the extra security of watching the pressure dial.

I love how Susie uses Stevia, I would love to know how she likes stevia being canned, vs. added afterwards. I am on a sugar free way of eating, and ALWAYS interested in how to can JAMS etc. with NO SUGAR! Tell Susie thank you for showing us her lovely pantry! 🌷

@comfort creek ranch I have made nectarine jam with swerve sugar replacement and pomona pectin. Pomona pectin let's you use less sugar and the box goes a long way. 🙂

Thank you for sharing this wealth of knowledge from Suzi. She is absolutely adorable and I wish I could spend some time with her. On a trip to NY, we went to Pennsylvania and took a tour of the Amish community. They are the kindest people and work so hard to live a life that is pleasing to God. Many years ago I purchased a corner shelf for $25 at a yard sale. It turned out to be Amish craftsmanship and still looks the same today as it did 30 years ago. It is one of my most priced possessions. People today don't understand the joy in a job well done and the sense of pride in making things yourself. I taught my daughters it's better not to do a job at all than to do it halfway. Our young people have lost these lessons. It's good to see more are returning to the tried and true methods. ❤❤❤

I thoroughly enjoyed this. Thank you to dear soul Susie for sharing with all of us. I love the fact that Susie uses every little bit of the fruits. And as far as bottles being reused….she and her family are still here to pass along the knowledge and safety of doing so. I reused bottle for many years. And I will continue to do so. I do open kettle for everything fruit(including tomatoes) that goes in hot. Last week I took my old glass juice jars from buying juice and made apple juice. They sealed great using open kettle method.

Potato idea....these r sooo good cooked this way. Rinse off potatoes. Set air fryer paper in tray. Spray well with oil. Place potatoes on it. Spray again and season with salt/pepper. 400 for about 15 min. Yum.

Thank you so much to both you and Susie for showing waterbath and open kettle canning. In Europe waterbathing meat, fish and vegetables is tried and trusted with open kettle for fruits the norm but the claws of the USDA is stifling any information on this online. Recipes, trusted for generations are nearly impossible to get. I’m really looking forward to Susies recipes.

I am canning fruits, veggies, soups, and so much more only with using the water bath canning system since 30 years. And I also reuse my weck jars on and on and on. Maybe 2 jars are went bad in the whole time. Everything else is good until we eat it.

I am living in Lagrange County, Indiana, because my 93-year-old mother is blind and can no longer live alone safely. My home is in southern, Michigan. We have many Amish in both areas. I became friends with one of them when I frequented their produce stand. I have canned with her and found out that she also uses a pressure canner. I have learned a lot from her and I have also taught her a few tricks as well. I enjoy our friendship.

I use all different kinds of jars to can too been doing it since I was a young boy, I am 62 now and still do it, I reuse jars too I save them from year to year, as most people do around my area! My mom used to carry a canning ring or lid always in her purse and when she went grocery shopping she got so she could tell by feel if a canning lid and ring would fit on what ever she bought, she would pick the glass jars that she could can in! I am a old fashioned canner and a rebel type canner, I do pasta and soup with noodles all the time, and I use regular corn starch as mom did for pie fillings and other things, gravies and such! I bought the clear type once and didn’t like it, so went back to mommas way stuck with it all these years! I ain’t dead yet! We never used a pressure cooker growing up it was all done boiling water bath or open kettle, I do use pressure canning now for everything, I just do it! Probably not the recommended way but there not eating my food I am, my way! Blessings on you and Susie✝️🙏🏡❤️🦌👴💒✅

Can you ladies do a collaboration cookbook? I love Suzie's accent (I loved listening to her speaking her language with her son, so cute 💝) she's so salt of the earth, so refreshing to listen to you two discuss pickles & juices & jams 🇦🇺🧡 I got what she meant about the jam. Also if you could sweetheart ask her how she keeps her fruit so white, I use vinegar but hers are just beautiful? You truly are doing the Lords work getting these videos out to everyone! I used to hot water bath my green beans for 4 hours at a roll boil. Which was the way my mother in laws , mommy did hers. So i heard her say the potatoes only took 2 hours! That would be a huge time saver, I had always thought potatoes took longer than beans. I am proof positive you can teach an old dog new tricks!
