How amazing that you posted this today, since I got a pork loin and didn't know what I was going to do with it! Never thought of butterflying a pork loin, so I will try this, but I only have fresh sage and Greek oregano in my garden at the moment. I'm not sure if it will turn out as lovely as yours looks though! And the gravy!!! My mouth is watering. Love youse!

This is the best pork loin I’ve ever made. 10 out of 10! I put a little fennel seed in the middle mix. Oh and I threw a red potatoes in before cooking.
