Lumpiang Hubad is a no-wrap vegetable roll version of the classic Filipino Lumpiang sariwa. This is basically crisp vegetables with tofu and chicken breast topped with a sweet peanut sauce.
INGREDIENTS:
- 550g chicken breast, sliced
- 2 medium size sweet potatoes, thinly sliced
- 2 medium size carrots, thinly sliced
- 300g green beans, thinly sliced
- 1 block firm tofu, cut into cubes
- 1/2 head of cabbage, thinly sliced
- salt and ground block pepper, to taste
- cooking oil
- 4 cloves garlic, minced
- 1 medium size onion, chopped
- 1/2 cup water
- 1/2 cube chicken bouillon
- 1 1/2 tbsp oyster sauce
- semame oil, a few drops
LUMPIA SAUCE:
- 2 cups water
- 4 tbsp cornstarch
- 6 tbsp soy sauce
- 6 tbsp brown sugar
- 1 tsp garlic, minced
- ground peanuts
