would not recommend to marinate any meat then cook it in oven like that. I get that you want to enhance the flavor of the meat but there is a reason why most people don't do it because you are already BAKING the meat in the oven with it's sauce/rubs with an aluminum wrapper to trap the flavor. and no need to keep brushing those meat every now and then like you are grilling, just let it rest for 3-4 hours to let it tender and absorb all the flavor from the rub/sauce then an additional 20 mins if you want its sauce to caramelized and sticky.
Ang hamonado po na nakasanayan ko ay wala ng gisa-gisa di tulad ng luto sa iba na ginigisa pa sa bawang at sibuyas. Ganyan pong luto ang masarap talaga.
