Autumn is fast approaching and it's the season for baked goods made with butter.
I'll make the baked goods that go well with sweet coffee again,
but today I'd like to introduce two types of scones.
Two types, a soft crunchy scone and a crunchy scone, are slightly modified from the basic plain flavor.
The video also includes how to make them by hand and how to make them with a food processor.
I hope you'll watch and realize how different a few ingredients and ratios can make them.
Both are delicious.
Try making whichever is easier for you.
⬛︎Ingredients
◯ Soft and crunchy scones
100g cake flour
100g bread flour
10-30g sugar Try making it to your desired sweetness. 10g tastes about the same as a KFC biscuit.
2g salt
2 teaspoons (8g) baking powder
60g unsalted butter
125g milk
For the cocoa dough, add 15g cocoa. Combine 30g roasted walnuts and 30g chocolate chips.
Add a moderate amount of ham and corn to the remaining dough after punching out to make it a meal.
◯Crunchy scones
200g cake flour
1 teaspoon (4g) baking powder
20g sugar
2g salt
60g unsalted butter
20g eggs
50g milk
For the matcha dough, add 12g matcha powder to the above to make the dough, and then add 50g white chocolate chips. The matcha reduces the moisture, so you can add about 1 teaspoon more milk to make it easier to make. (In the video, half the amount of plain dough is used.)
For the berries, add 120g frozen berries to the above dough. In the video, half the amount of plain batter was used for the berries.
