Apple Butter Recipe - No Peeling Required, Overnight, CrockPot Method - Steph’s Stove

Apple Butter
5 ½ pounds of apples (Gayla or another soft apple)
1 cup light brown sugar
¾ cup granulated sugar
1 tablespoon cinnamon
⅛ teaspoon nutmeg or cloves (I used nutmeg in the video)
¼ teaspoon salt
1 ½ teaspoon vanilla extract
Thoroughly wash apples and remove stems. Using an apple slicer, core apples and slice each apple section into 1/4 inch pieces. Do not peel the apples. In a separate bowl mix together brown sugar, granulated sugar, cinnamon, nutmeg, salt, and vanilla extract. Place apples into your CrockPot and sprinkle sugar mixture over top of the apples covering completely. Cook for 10 hours on LOW. After 10 hours, remove the lid, puree (using an immersion blender) to a smooth consistency. Cook for an additional 1 hour with the lid and then 1- 1 ½ hours without the lid. Stir approximately every 15 minutes to prevent sticking. Exact time will depend on your preferred consistency.
To test Apple Butter consistency, scoop a teaspoon full of apple butter, move the spoon away from the heat, and allow it to cool for 2-3 minutes. The Apple Butter should remain on the spoon in the original shape and should not be watery or drip off. When the spoon is inverted, the apple butter should fall in one or two solid large lumps.
Be patient! The cooking process will vary depending on the apples and their water content. Enjoy with toast, over pancakes, biscuits, ice cream, or even pork chops.

Daughter’s driving home for her birthday tomorrow and I just have 12 apples to work with, but I assume I can reduce the ingredient amounts by 1/3 and slow cook the same amount of time, or maybe it’ll be a little quicker to achieve the thickness you got… we’ll see! Really like that you included vanilla & the other good spices in there. I’ve seen a couple of recipes that only had sugar added to the apples. I need a little more variety. : ) Thanks- in Dallas

Yes, just adjust the ingredients according to your apples. If your texture is not thick enough, just cook a little longer the reduce the water content. @@stephsstovebystephaniethom7249 Made it & it tasted just like great apple butter should taste, despite my gambling a bit with a few spice tweaks! Just so others aren’t afraid to experiment, here are some ways my a.b. went off on it’s own path & still came out well: used the 12 apples I had- 6 Gala & 6 Honeycrisp (a little harder for chopping up but the end-flavor was just fine); equal amounts of both nutmeg & ground clove, plus a touch of allspice, slightly heavier with the vanilla, since I had some really good Mexican vanilla that a friend gave me; a little less granulated sugar; two tablespoons of melted butter mixed in with all the brown sugar, cinnamon & spices.. and in general, used about a third less of everything your 18-apple recipe calls for. Slow-cooked it an extra half hour, just for the heck of it. Had plenty to both refrigerate for us now & freeze for daughter to take back with her. One naive mistake: I used a pot liner for easy clean-up, thinking the immersion blender wouldn’t catch it since it has the protective edge… but I got too close to a fold along the side wall of the crock pot & ripped a big hole in the liner 🤭. So don’t do that folks! (But SO good just now on my bagel w/ warm cream cheese… perfect consistency. 🤤). TY again for your recipe to build off of!! First time ever making homemade a. butter- and I’m not typically a confident cook, lol. 😌

@bendmymind486 Sounds like a winner 🏆 to me!!! As for the crockpot liners, you do need to be careful with them. Otherwise, perfect 👍🏼 Si glad you liked the recipe and your turned out so well. Also, I love how you tweaked it according to your taste. That’s the best thing about cooking, you can customize each recipe according to what your family likes. I used the gala apples and I got 3 pound bags of them and I cooked them in my crockpot all day with cinnamon brown sugar and white sugar and I put one stick of butter in mine and it had my apartment smelling so good did I say I got two 3 pound bags and peeled and cored them and cut them up and I just let it cook in my slow cooker and I stirred it every now and then and I canned up 3 pint jars of apple butter and I added one teaspoon of vanilla extract

I love the fact that you don't throw out the peels. We're a surgar free family and I'm going to try making this surgar free,,with a combination of sweet and tart apples 🍎..maybe a little surgar free sweetener..do you have a suggestion on what kind?

I agree the peels are perfect and I would never throw them out in this recipe. I think they add to it. As for the sugar substitute, I have not made this sugar free and not sure what would be the best, however, I’m sure you could use the sugar substitute your family likes best. Hi neighbor I'm in the same city. I used slices and it worked fine, except I did occasionally stir to keep the apples in the liquid and not dry out. Total of 2 stirs.
