I've done caramel in pan plenty of times and one thing I've always avoided was doing it with water right away. I just start with sugar and let it melt, then I start adding a little bit of water, and butter and cream afterwards.

I have always do ne it with a couple teaspoons of water in, never had crystallisation issue. I think the problem is the pan not being completely clean in the video. That can be nucleation site for crystal formation.

Yes that's exactly what I do. I don't even use water actually. I just pour sugar into a pan, let it melt, let it just start to brown - then turn off the heat and quickly whisk in butter and cream. The cream will seize it a bit - that's fine, just keep whisking and turn the heat back on low if necessary.

I actually think it's really important to show it. If you're saying "this is the method" and then you do 5 takes/tweaks to produce the ultimate footage that shows "the correct result from the method" - then it might make great food-porn content, but everybody who tries to actually make it is 80% screwed. Stuff goes sideways in cooking, and half the fun is finding trying alternate methods (I see a few people have strong caramel tips) - or just 'you might want to buy this bit, it makes no difference'

I’ve had the same problem making caramel, you can’t add water too it, you have to set the sugar in a hot pan and allow it to turn an amber color without burning it. Then add a couple tablespoons of butter, quartered, and then whisk in heavy cream to make it creamy

Great recipe. Much easier than making an apple pie. Can I substitute the apple variety? For great caramel sauce every time: • dissolve 1 and 1/2 cups of sugar in 1/4 cups of water over high heat. Stir occasionally until it turns a dark amber color. (About 9-10 min) • In separate pan heat 2 and 1/2 TBS unsalted butter and 1 CUP of heavy cream until butter melts. • Remove the pan from the heat. Pour the warm cream into the caramel. Stir until the caramel dissolves. Serve warm or let cool completely. Will last in fridge up to 2 weeks. *For salted caramel add 1 tsp kosher salt.

This looks very good. Last year, I was making filling for "foolproof" pecan pie (I've made it for over twenty years), and ended up making a very delicious caramel. Lol! I'm looking forward to your caramel vlog.

You overheated the caramel. Use a pot with a smaller base on low heat. It has always taken me at least 20 minutes to get to caramel as opposed to the recipes saying it takes less.

Also entirely anecdotally, it can be done way faster (from a sample size of me) - and a method I can't recall who to attribute to. I just chuck white sugar into a pan and leave it on low heat - no stirring. It'll start to melt from the edge, then start to go golden from the edge. Once that hits the middle, take it off the heat and chuck in the butter and once that's in stir in the cream. I'm cooking the sugar, butter tastes good and cold butter stops it cooking further, cream is there for 'creaminess' - but as it's mainly water you add to get the consistency you want. Now that's not to say I haven't added enough, and ended up with a solid brick in my pan (holding my spatula). Accidental toffee.

This sounds like a great recipe. I'm pretty good with basic cooking techniques, but candies are a whole field unto themselves. I always rush caramelization when making candies.

Was looking for something different to make for Christmas dessert. Thanks for answering that dilemma. Last year I made a beautiful gingerbread cake in a bundt pan with drizzled white glaze like melting snow. It was beautiful and easy. But I can't have the SAME thing this year! That would just be redundant! So I'm making this! I will be store-buying my caramel sauce too!

Oh I was also planning to substitute 1/2 cup apple sauce for 1/2 cup of the oil. Hope it works! Update: Yes, it worked fine. Saves about a 1/2 cup of oil calories too. Delicious cake, everyone loved it!

This looks fantastic! But seriously, the Sticky Toffee Pudding is *ABSOLUTELY AMAZING.* You should have made the toffee from that recipe to go with this ... but hindsight is always 20/20.

Not a sugar expert but for caramel it's easier (IMHO) to start with dry sugar and not touch it, then when it starts caramelizing you cut it with watever you want (butter, cream, water/lemon juice)

For the caramel....use a drop of corn syrup.... the different type of sugar actually prevents crystallization of the refined sugar.

Can i grate the apples Chef.. And...you don't caramel sugar with water chef..just sugar on a low heat..an brown sugar is the better to use chef..you can add water or cream or whatever after it turn caramel..even nuts and fresh ginger for nut cake..

the pastry brush on the sides of the pot is silly and tedious, place sugar first water afterwards and use a glass lid until it boils vigorously, sugar and water will dissolve and no crystals will ever form, also it is imperative to use some honey/maple syrup/corn syrup/golden syrup or some lemon juice to avoid crystals from reforming. after boiling, dissolving and thickening use as directed with any additions of cream, condensed milk, butter or other add ons.

Why did you use any water at all to make your caramel ? Isn't it way harder than making 'dry' caramel and then add some cream/salted butter ?

Next time get a glass of water and a pastry brush. Wet the brush and wipe down the sides to remove any sugar/sugar crystals from the side. Once it turns clear as it cooks, if there are no crystals on the side you are good to go, it shouldn't crystalize.

I do that all the time in other recipes. The oil isn't adding flavor, just adding fat. So any neutral tasting oil should work here (not olive oil). Just my experience!

Man, a easy way to make caramel is to start with sugar and butter, the butter will melt with the sugar and will caramelize. Than I finish with vanilla and heavy cream. Hope it helps!

Caramel is made from heating sugar, period. If you want to make it more of a liquid and luscious caramel, add...butter not water. Also, if you've never made caramel before, use a non stick pan. It works better for some reason. The cake looks fantastic. Too bad I don't eat sugar, or eggs.

Really not to offend you but caramel sauce always does that the crystals will disolve again once you add in the cream and stir a bit ... just telling you so you dont get so frustrated with the sauce
