Apple Cake Recipe
600 g - apples
300 g - all-purpose flour
6 g - baking powder
pinch of salt
3 - eggs
220 g - sugar
1 tsp vanilla extract
100 ml - vegetable oil
200 ml - plain yogurt
1 tsp - cinnamon
2 tbsp - lemon juice
All ingredients must be at room temperature.
1) Preheat oven to 180 C (360 F). Grease and line a 9 1/2 inches (24 cm) cake tin with baking or parchment paper.
2) Peel apples and cut them into wedges, remove the core and slices. Sprinkle lemon juice over them and set aside.
3) In a medium bowl whisk the flour, baking powder and salt. Set aside.
4) In a large bowl add eggs with sugar and beat for few minutes until thick and fluffy. Add oil and plain yogurt, mix until well combined. Add vanilla extract. Then add the flour mixture and mix on low speed until just combined.
5) Transfer the batter to the prepared pan and smooth the top. Arrange the apple slices, flat-side down, on the batter in a spiral pattern. Sprinkle cinnamon over the apples.
6) Bake in preheated oven for about 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
7) Remove from oven and place on a wire rack to cool. Sprinkle with icing sugar before serving.
