Apple Cider Doughnuts are definitely one of the 'pros' of living in the Northeast. Honestly a true apple cider doughnut is not like any doughnut you've ever had before. The apple cider does something magical to the dough, something wonderful. The entire outside of the cider doughnut becomes just a little crunchy, while the inside remains so light and fluffy that it just floats in your mouth. Even without all the cinnamon sugar topping, it's still really amazing. It is by far the best thing to eat with a cup of hot apple cider as you are walking around the cold outdoors up here. If you are buying your doughnuts and cider from a booth instead of making them, do the bee check. If you don't see any bees buzzing around the booth, MOVE ON. If you indeed see a plethora of happy bees attracted to the golden nectar being made inside, you have arrived at the right place. I recommend dunking the apple cider doughnut into your hot apple cider for 3 seconds. Dunking it for less time than that and you won't get the perfect balance of cider and doughnut ratio, any more time than that and you will lose your doughnut in the apple cider. Not the worst thing in the world, but everyone around you will definitely know you are a novice, so don't let it happen! Happy Autumn everyone!

This perfectly reminds me of the first time I ever ate an apple cider donut made on a farm known for its honey and jelly. Apple cider has remained my favorite flavor some 20 years later. Also I saw your channel and hopped over hoping to find a huge list of coffee and cupcake recipes XD

As someone who grew up mostly in Michigan, cider donuts are as essential to the autumn experience as football, pumpkin spice, and orange leaves. Sadly, since I moved South, there haven't been many opportunities to get them. But this video gives me some ideas...

Made these professionally for 7 years. We made the donuts using the drop method with a donut hopper. load the hopper with the mix and dropped the donut directly into the fryer. The dough itself needs to be thinner but in turn, you dont need actually roll it out. Makes the donut light and fluffy.

yeah I was gonna say last time i checked, batter donuts usually get plopped, not rolled and cut. that's why theyre so weird, theyre not dough at all. but while they are inferior to yeast-risen actual-dough donuts, they do have some wonderful crackly craggly bits where the loose batter gets unevenly fried. which again these rolled ones seemed to lack.

I've seen the light and fluffy versions, but I'm more familiar with the dense ones myself, and that to me at least seems to be the more common variant, which I assume is more than likely using this method (or a heavily altered drop recipe)

I used to work in the donut kitchens at my local orchard. My favorite part of the job was when the hopper wouldn't extrude full donuts at the end of the batch. They would make little scraggly bits that we would snack on right out of the frier. Much crispier than your standard donut.

I worked on an apple orchard for 2 years and the apples were by far on a completely different level to any storebought apple. They didn't look as shiny or clean, but they were by far the best tasting. The cider made from it was not comparable to apple juice, due to the cider being purely better in every shape and form. We even had dark red pigmented apples that turned the apple cider a ruby red hue, or green apple cider made from unripe apples. Doughnuts are all the same though, I think the cider makes the moment.

I made apple cider donuts a couple weeks ago. It was Brian Lagerstrom’s apple cider donuts. First time I’ve ever had something like that and it was amazing. He uses a straight apple cider and a hybrid yeast/cake dough. Also he coats the doughnuts in raw sugar to give them a bit of a crunch. Probably the best donuts I’ve ever had and they were bursting with apple flavor.

Thanks for the grams. It saves me from washing a ton of measuring dishes. Grams also covers the entire range of recipe weights from 5-7gms for items like yeast and salt to hundreds of grams for items like flour and sugar. Same set of scales and I can just keep going.

We do "hard" apple cider in the US as well. And as someone who doesn't drink, a fair bit of things labeled only "apple cider" has alcohol in it so I don't drink cider anymore. It's a minefield.

@@clairewoods1858 Apple juice is just the juice of apples. Cider is usually spiced with cinnamon, ginger, nutmeg, or cloves, and it's pretty normal to contain citrus.

I would really like to see you try an episode on how to store different food in a kitchen, it would help a lot of young cooks like me who live on their own. Here in the US, the fermented cider is, if referred to at all, called "hard cider", and I think it's grown in popularity in the last decade along with the microbrew trend or whatever, people getting gourmet with their drinking selections. "Apple cider" is the fresh pressed juice shown here. I had thought before this episode that the "spiced cider" he makes here was kind of a hot punch that starts with that juice rather than from boiling apples. Is that kind of juice more common where you are as juice, or is the common "apple juice" filtered, pasteurized, and otherwise processed into a much thinner, very translucent liquid like we do here? Also if you're cheap, you can get your kids "apple drink", diluted juice that may have sugar added.

I made these this morning and took them to church and some neighbors--huge hit! I reduced my cider too far, so I shredded a small apple and added it to the batter. I also added a little nutmeg and fine salt to the cinnamon sugar mix. I then whisked in a few drops of cider vinegar which gave it a really nice extra note to the outer layer.

ooooo, after a long time without it, I coincidentally had some amazing Cider yesterday. This sounds very interesting! //edit: waaaaiit? That's apple cider in America? Huh. "Cider" here in Germany is an apple wine! I didn't expect this to be non-alcoholic juice.

You can use a very similar recipe for mini muffin donuts if you don't want to fry and don't have cutters. Did so the other day; they were fantastic.

I don't know what it's like outside of the US, but here, apple cider is what you get from pulping and squeezing apples. It's thick and pulpy and delicious. Alcoholic would be hard apple cider.

It varies. For whatever reason, Americans have to be different, so when we refer to apple cider, we are basically referring to fresh squeezed apple juice (usually spiced and/or mixed with caramel). We'd call the alcoholic stuff "hard cider", and if you sweeten the fresh-squeezed juice with more sugar, we'd call that apple juice. In the rest of the world, apple cider is the alcoholic version, apple juice is the fresh-squeezed juice, and the sweetened apple juice is an abomination that's probably way too sweet for the average Europeans palette and I imagine probably doesn't have a direct parallel outside of the US and maybe Canada. So you are correct, cider is universally alcohol, except in America.

The difference is Fresh cider is raw apple juice that has not undergone a filtration process to remove coarse particles of pulp or sediment …. Apple juice is juice that has been filtered to remove solids and pasteurized so that it will stay fresh longer.” Apple cider can also become fizzy and slightly alcoholic because the yeasts in it. There’s also a second definition of juice made with apples picked early in the season.
