Today I am sharing a recipe that makes my life much easier during the work week - Apple Cinnamon Oatmeal Bake. I make it on Sundays and eat it for breakfast during my work week (Monday thru Thursday). This recipe is included in my Realistic 5 Day Meal Plan. Apple Cinnamon Oatmeal Bake
Dry Ingredients:
1.5 cups of rolled oats
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp nutmeg
Wet ingredients:
Flax egg (1 TBSP ground flax mixed with 3TBSP water - mix and set aside)
1 cup unsweetened applesauce
1.25 cups unsweetened plant milk
1 tsp vanilla extract
2 apples - peeled and diced
Directions:
1. Preheat the oven to 350 degrees
2. Chop/Dice apples
3. Make Flax Egg and set aside.
4. Mix Dry ingredients
5. Mix Wet ingredients.
6. Combine all ingredients and fold in apples
7. Bake for 35 min until golden bow.
8. Add maple syrup (optional) and ENJOY!
