Apple pie for the holiday - what could be simpler? And if you make a beautiful decoration, then such a pie will undoubtedly become a decoration for the holiday table! I offer a recipe for classic charlotte in a new design. There are many options for preparing charlotte, but this one, in my opinion, is the most successful. The charlotte turns out fluffy, airy, aromatic, and moderately sweet.

🍡Ingredients:
apples - 800 gr (3 large)
eggs - 4 pcs
flour - 160 gr
sugar - 150 gr
vanilla sugar (optional) - 8 g
water - 400 ml
lemon juice - 2 tbsp. l.
salt - a pinch
🍡Preparation:
1. Apples for roses: divide 2 large apples into quarters, remove the core, cut into very thin slices (it is convenient to do this on a special grater), place in a saucepan, add sugar (2-3 tbsp) and lemon juice, pour cold water. Place on low heat and simmer a little (5-7 minutes) until the plates become flexible (be careful, the main thing is not to overcook, otherwise they will start to break). Drain and cool;
2. Add salt and vanilla sugar to the eggs, beat until fluffy, gradually adding sugar;
3. Add sifted flour to the beaten egg mass in several stages, stirring gently with a whisk;
4. Pour half of the dough into a pan lined with parchment paper;
5. Separate the remaining apples (1-2 pieces) from the core, peel, cut into thin plates or slices, place in a deep bowl, sprinkle with lemon juice (optional) and carefully place in a circle on the dough. Then fill with the remaining dough;
6. Form roses from boiled apple slices. To do this, lay out 4-5 plates in a row, slightly overlapping each other, and carefully roll them into a tube;
7. Place the resulting roses on top of the dough;
8. Bake at 180°C for approximately 35-45 minutes. until lightly browned. You can check readiness with a toothpick.
9. Cool the finished charlotte, remove from the mold, and sprinkle with powdered sugar if desired.
P.S. It is better to use apples for roses that are dense and juicy, but NOT crumbly ones! otherwise the records will break.
