It's a cooking video! Let's make a pie in my vintage kitchen! I recently went to an apple festival and thought it would be fun to buy some apples at the festival and use them to bake an apple pie using a vintage recipe. I used a vintage Betty Crocker recipe. Let me know if you like these vintage cooking videos, and I can make some more. This was a fun first attempt. I've never made an apple pie, or a crust from scratch before, and I am happy with how it came out. Hope you enjoy!! Thanks for watching! If you end up making this pie let me know!
Here's the recipe I used:
Crust:
1 cup flour
1/2 tsp salt
1/3 cup shortening
2-4 tbsp water
(I doubled this because I needed a top and bottom crust)
Mix flour and salt, cut in shortening to flour until pea size. Add water one tbsp at a time until moistened. Form into a ball.
Apple Pie
1/2 c sugar
1/4 c flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp salt
8 cups thin sliced apples (about 8 medium apples)
2 tbsp butter
Preheat oven to 425, bake for 40 minutes.

I have my mom’s Betty Crocker cookbook from her 1957 bridal shower. It’s well worn and stained with flour, sugar and shortening, but it is well loved. What a treasure it is to look at the recipes and follow along. So blessed to use it.

Hi! I have my Mom's Betty Crocker cookbook as well. Probably from the same year, she was married in 1957.. The front cover is gone and it is also stained and well worn. I cherish mine too!

You have to chill the crust for at least an hour or longer. Divide the crust so the bottom piece is bigger. Use ice water and one tablespoon of vinegar. Don’t use your hands as it melts the shortening. Use 2 knives if you have no pastry blender. Only use your finger tips if you only have your hands. Spend. Few days making crust and the.n you will be good at it.

So I wasn't able to go through and look at all the comments but as a baker, I wanted to throw some advice out there. First off always prepare your apples first so they are ready to go right into your pie crust. Second, when making pie dough always used ingredients that are well chilled. It makes for a flakier, tender crust. Next, add ice to your water and allow it to sit for a few minutes while you start on the pie crust. Though shortening isn't an ideal fat source (but it is truly vintage) Try measuring your shortening and sticking it in the fridge for an hour to make sure it's nice and cold. NEVER use your hands to blend as it does warm all your ingredients. If you still aren't committed to buying a pastry blender use a fork to incorporate the shortening until it becomes pea-sized crumbles. OR a food processor works amazing for this, you can look up how to do that online. If the process of combing everything took longer than a minute or two I would suggest that you let it rest in the fridge for 30 minutes or so so it can return to being chilled. Also, don't be afraid to pile up your apples in your crust. They will shrink considerably!

^^^This, but also - if you are working with a filling after the crust is in the plate, but NOT baked, then you can stick the covered pie crust in the fridge for a little bit. Not great, because of condensation, but better than it sitting at room temp

I'll never forget watching my great aunt make a pie it was so effortless for her she was just chatting and casually ran a knife around the edges of crust in one hand ... I hope I can get that good some day lol last time I tried to make pie crust it fell apart lol 😅 she had a vintage home as well she used to collect antiques her house was so amazing. She moved and sold alot of her collection but it was fun to grow up around all of it 🙂

I always heap on my apples, so I would have used all of them 😉. Apples shrink in the oven because they have a lot of water in them. Absolutely gorgeous video. Your kitchen is adorable!! I’d love to see you make a whole 1950’s meal from start to finish!

I've been cooking and baking for decades, and I think you did great for your first try. Against popular belief, I never put my pie dough in the fridge before rolling, That's an old way of thinking, and its just not necessary. I always add extra cinnamon and some fresh nutmeg. I also bake pretty much everything on a baking sheet in case the filling spills over. No oven to clean :) You did great. Keep on baking ! :) 💗💗💗💗💗💗

Ahhh that outfit! That kitchen! What a cute video! Somehow, this made me less intimidated about making crusts from scratch. Also, Idk why I didn't know about this but covering the crust with foil is a great tip! I'm not doing any baking at the moment but I will definitely refer back to this when I do again. Laci...Thank you for your videos. I especially love the cooking, vintage hauls, thrifting, decorating. Love your style and you are absolutely beautiful : inside and out! I'm an old pie baker and I encourage you to invest in the pastry cutter, pie shields and waxed paper. They are all so worth it. Use ice cold water, and when you roll out the pastry roll it between two pieces of waxed paper dusted with flour: No sticking to counter and secret to flakey crust is not handling the pastry. How blessed is your family that you are into baking: you know what is in your baked goods: no preservatives! And everyone feels so loved when getting home baked goods. Great job! You are an inspiration!

Tip: wrap your dough in plastic wrap, refrigerated for about an hour, when your rolling it out, make sure you use a bit more flour on your counter and on the rolling pin. Apples go into apple sauce. Slice a bit larger than you did for this pie. Pile up the apples quite well and leave a bit of a well in the center of the apples. Brush top crust with milk and sprinkle with regular sugar. This was how my parents made their fruit pies. You did a really good job for your first try. 😀😀😀

Cathy is totally right! Also, cut your shortening into pieces and put it in the freezer for about half an hour before making the pie crust, then cut it into the flour with two knives or a pastry cutter...if you use your hands, make sure they are cold so they don't melt the shortening. You want tiny little chunks of cold shortening throughout the crust, then when it cooks it will help to separate it into flaky layers, with pie pastry, cold is key. I've just found your channel and I've watched a few now! Great content! Your pie still looks fabulous, btw, I hope you enjoyed it!

I’d add that rolling the dough between two sheets of parchment or waxed paper is really helpful. You did a beautiful job - you can’t learn if you never try. My grandmother and mother made it look so easy - second nature to them.

Looks FABULOUS‼️ I make my apple pies using a cookbook my parents received as a wedding gift in 1960 so very very similar recipe. I've made my apple pie like this for so long that store bought and restaurant pie no longer satisfy us. Just no comparison. Great job Laci‼️

My mother, in the early 50s and early in her marriage, lived in such a tiny apartment with my father that she’d scrub a patch of her kitchen floor to roll out pie crusts because there wasn’t enough counter space to do it. I think that’s so cute!☺️

I have my grams Betty crocker cookbook. Some really great things in there. Heap those apples sky high and chill you crust. Using just enough water to make the dough come together and chilling it allows the flour to hydrate, the gluten to relax, and less water means less gluten meaning a more tender crust. If you have a food processor use it. Never fails. Great first pie though, better than mine.

That looks soooo good! 🤤 If I can give my piece of advice when it comes to to pie crust and shortbread it’s way easier to work with if you chuck it in the fridge for half an hour/an hour. Then if you work fast it won’t stick to the rolling pin and you’ll work it more easily.

This video reminds me of my grandmother baking apple pies from scratch for Thanksgiving. I loved cooking with her and my mother when I was a child. My mother always ate her apple pie with cheddar cheese. I tried it that way and it's actually pretty good. I'm so impressed with how your crust turned out - great job for a first effort! Great job on your first pie! I enjoyed watching you make it. I’ve been baking pies for decades and have learned a few things along the way and made a lot of mistakes as well. I know the shortening is the fat you had on hand, I like to use a combination of lard, butter and a little shortening. The lard is for flakiness, the butter for flavor and the shortening to make it more tender.

Sometimes with homemade crusts you need to refrigerate the balls of dough after you knead them with your hands to cool them back down. I’ve had the same thing happen to me. Your kitchen is what vintage home dreams are modeled after! I absolutely love it!

You could have used all those apples in the pie. They do cook down. Most recipes call for you to mound the apples up in the middle. But it did turn out great, especially for your first pie! So love that stove!

This was great, more cooking/baking videos please! The method you were using is the 'rubbing in' method (for the flour and shortening). I am doing loads of 'ration book' cooking here in the UK as we are on lockdown (as is most of the world sadly). Stay safe @ x

My favorite pie! I learned to make pie crusts way back in 4-H and home Ec as well as from my mother and grandmother but still cannot make a very attractive crust like my mother and grandmother always did so I only make rustic apple pies now (one crust folded up and over)! By the way, old-time Mainers always ate/eat "rat-trap" (very sharp) cheese with their apple pie!

Great job! It looks delicious! My mother would sometimes buy a small soft, clean ,regular paint brush and use it for brushing on melted butter on pies and turkeys. It works! That way your hands stay clean and it puts it on evenly. Just a thought for you.

Loved the video! The more you make crust the better you get at it! I love Betty Crocker with a passion, but IMHO, her crust is not the best recipe. My recipe calls for an egg and vinegar and it's a soft, easy to roll dough, and the vinegar makes it so flaky! Kudos to you for trying something new!!

I always used to kitchen knives slicing each in opposite directions to incorporate the shortening into the flour 😀
