Vintage Recipe- Peaches & Cream Pie

Who wants pie? I thought it would be fun to break out my 1955 Cooking Magic cookbooks and try a new recipe. I will list the entire recipe below. This was a bit of a challenge for me, and my first attempt at the crust was a total fail. However, I did tweak my method and try again and it worked much better on my second try. Please make sure and tag me if you try this fun vintage recipe. I'd love to see your pies! I really enjoyed this pie, and my family ate the whole thing!
Pastry Crust-
Set out 8-9 inch pie pan
sift together
1 cup sifted flour
1/2 tsp salt
Cut in with pastry blender or two knives until pieces are the size of small peas.
1/3 cup lard, vegetable shortening, or all-purpose shortening
Sprinkle gradually
2 1/2 TBSP cold water
Bake at 450 for 10-15 min until light golden brown
Peaches & Cream Pie
set aside and drain thoroughly 1-2 cans of peach halves
sift together-
1/4 cup sugar
1/4 cup flour
1/2 tsp cinnamon
Sprinkle 2/3 of dry ingredients evenly over bottom of pastry shell. Place thoroughly drained peach halves in pastry shell, cut-side up; do not overlap. Sprinkle remaining dry ingredients over peaches. Spread evenly over peaches:
2 cups thick sour cream
mix together and sprinkle over cream:
2 TBSP sugar
1/2 tsp cinnamon
Bake at 450 for 20 minutes. Serve pie slightly warm.

Great job on your pie-making skills. Remember that in the era that you like to dress in, the people were more skilled than we are today. I know we are all for equality nowadays. But back then, women were trained to become home-makers. So they had the know-how to do the baking, cooking, and perfection that we all crave now. It is an art and science to baking. I also think the measurements from back then were smaller than the ones we currently have, so the recipes won't be that great. They won't work as well as they should. So you have to have the eye for baking and cooking to know what the food needs to be made correctly. When you make your pie crust, put the butter/lard/shortening and flour all into the freezer for 15-30 minutes before mixing them with 1 TB. of water at a time. Less is more. You can always add more later. But a pie crust is more flour and fat than there is water. And do not overwork it. After you mix the super cold ingredients together. Form the dough into a large disc and saran wrap it and place the dough into the fridge for 20-30 minutes to completely chill out. Then you will pull out the dough, unwrap it and add flour everywhere so it doesn't stick. I use two sheets of parchment or wax paper with flour sprinkled on it to prevent the dough from sticking. And you are going to beat your dough with the rolling pin to flatten it out cause it will be hard at first. Before rolling it out at 1/4" thick. About as thick as your pinkie finger is. And working quickly you will place a pie pan over the sheet of dough, then cut the circle out about 1/2" thicker than the pie tin. And then place the cut-out circle into the pie tin. And then add a cup or two of beans before baking. They will weigh down your crust so it stays flat. You can throw the beans away or save them for the next pie baking. If you have warm hands while working the dough, use an ice bath to drench your hands into to get them cold enough to work with your dough. Let the crust cool completely before working with it. I tend to make a day of making crusts and freezing them in plastic bags separately in tins. So the crust is ready to be baked whenever I want to make a pie. They can last up to 1 year in the freezer. Great share! I absolutely love your stove. So jelly! And next time, let the pie cool down up to 2-4 hours before cutting into. I know they say to cut into them warm, but it's not ideal. It messes up and makes for soupy pies because they haven't congealed to set the gel-sauced creamy inside. Take care, hope these tips help for the next pie. Thank you for sharing!

I think the acidity of the sour cream probably plays nicely against the sugars? I wonder if whisking an egg or two into the sour cream might make it set and hold it's shape better when you cut it?

My mother baked this pie in 50s/60s. It was by far my brother's and my favorite pie. We NEVER ate hot. Makes a huge difference in consistency to chill 1st, or at least serve at room temperature.

This pie looks wonderful. With home made crust, the more you mix and roll it out, the easier it gets. I also make my pizza crust from scratch. It's amazing how eating from scratch at home has changed our taste to prefer this to premade store bought, drive thru, frozen or restaurant food. This peaches and cream pie really looks good.

When I do piecrust I put ice and water into a measuring cup so that the water is ice cold. Using a pastry blender works great to blend the lard/flour. Foil and dried beans work well for blind baking. Save and reuse beans for the next blind baking adventure.

I love my old cook books. Some of my best recipes come from them. My favorite book is a 1948 Better Homes and Gardens loose leaf cookbook, from an antique store I bought many years ago when I first got married. If you flatten your dough before chilling, it makes it easier to roll out. It took me a long time to perfect my pie crust. I don't think this pie is for me. I would go a different route with it.... I would make the crust , baked put in the peaches and top with whipped cream instead of the sour cream. tfs 💗💗💗 Yes, more cooking/baking videos ! :) 💗💗💗

My mom made the best pie crusts. She always used ice water and chilled butter to make the crusts and then worked it as little as possible.

I agree with your changes to the recipe. My Gram could make pie with her eyes shut. She would say at the holidays "I had 4 pies in the oven before breakfast!!!!" I can make pie crust but like you it's ok but the fillings I can make well. I LOVE LOVE LOVE peaches so this is one I will be trying. I will do two layers of peaches and less if the sour cream too. Wonderful watching you bake. Makes me feel like I am at my Grams house. I miss her sssoo badly.

Peaches and cream pie sounds delicious. My father used to make peach pies from our neighbors peach tree. Jack would set a bucket of peaches on the fence and my dad would make two pies, one for us and one for Jack. He made them with brown sugar on top and they were so yummy. I love watching your videos. Love your channel. I have an old time pie crust recipe that is very easy to work with. I makes (per the recipe) 5 single crusts, but I usually just divide it into 4. Foolproof Pie Crust 4 C flour 2 tsp salt 1 Tbsp sugar 1-1/2 C solid shortening 1/2 C cold water 1 Tbsp vinegar 1 egg Mix together flour, salt and sugar; cut in shortening until crumbly. In a small bowl, beat together water, vinegar, egg. Combine the 2 mixtures with a fork until all ingredients are moistened. Divide dough into 5 portions (I do 4.) Shape each portion into a round flat pattie. Chill for 1/2 hour before rolling. Keeps in refrigerator for 3 days. If all are not immediately needed, wrap dough disks in plastic and place in a ziplock freezer bag and freeze until needed. Thaw then roll.

Looks good! I made it & chill'd it.. work'd well too. My ovens hot too it's vintage also. I just turn it down 5 degrees then it works perfectly...an older lady told me that's what they did back when. 👵

Love your videos. For the pie crust my suggestion would be is when you wrap the dough in saran wrap, your dough should be shaped into a disk. This helps when rolling out the dough. As well your should chill the dough for at least 1 hour. Again this will help. When browning the pie crust may I suggest that to help the shrinkage of the dough use parchment paper weighed down with dry beans or rice. It helps for me. Happy baking.

It looked yummy like you said. It took me a while to perfect pie crust. The longer you refrigerate the crust the better. Also I use ice water in the crust recipe too. Made peaches is a good idea. We like peaches so I'm sure it would be a great pie for us! Thanks for sharing!

Loved this video- such a good idea to try out the vintage recipes! I’m a baker, and one of the secrets of my shop’s pie crust is to refrigerate everything prior to putting the dough together, even the dry ingredients. here is my moms pie crust recipe this was from her great grandmother and it never gets old and so yummy 3 cups of flour 1 cup of crisco crumble it up then 1 egg then a teeny little bit of whit vinegar and mix the wet mixture then add the egg and vinegar into the crumble then mix and shape ENJOY!!!

When you’re making pastry crust that you want to keep cold, Julia Child suggests buying a piece of marble to keep on a shelf in the fridge. You can get a piece for cold stone cheaply from somewhere that sells it for tombstones and they should be able to cut it for you.

Good for you with the pie crust. A few more times and you will have it down. Practice and trying a few different tricks helps. I am going to try this tomorrow, it looks delicious

You did excellently! Yes, pie crust is a thing that takes time to master. My mother was brilliant at making pie crust, but, it took her literally years to perfect it. One of the tricks is to not handle it too much so the dough doesn't get tough. What you want is a flakey pie crust. But, don't worry, I still haven't perfected it yet either and I'm a lot older than you, lol.
