Apple Tarte Tatin
Ingredients:
For the Short Crust Pastry Dough
250g all-purpose flour
pinch of salt
150g unsalted butter, chilled
1 egg
70g powdered sugar
For caramel:
150g sugar
30 ml water
6 tbsp (80g) unsalted butter
For the Filling:
10-12 (1.4 kg) apples
3tbsp (40g) unsalted butter
1 tsp ground cinnamon
Lemon juice from 1/2 lemon
Instructions
1. Prepare the crust. In a medium bowl, whisk flour with powdered sugar and salt. Add the diced butter and either rub in with your fingertips, or fork until you get crumbly texture. Add the egg and Gently knead the pastry until it just comes together.
2. Roll the pastry between two sheets of parchment paper to a 3mm-thick round . Refrigerate for at least 30 minutes.
3. Peel, quarter and core the apples. Place in a large bowl and toss with lemon juice. Heat a non-stick pan over medium heat and melt 3 tbsp of butter. Add the apples, and cook over low to medium heat for 10 minutes, or until the apples are softened.
4. Preheat oven to 360°F (180°C).
5. In a saucepan, add sugar and water over medium heat, and cook until it turns golden brown. Then stir in the 60g diced chilled butter. Pour the prepared caramel to a 10 inch (26cm) baking pan.
6. To assemble the tarte tatin, arrange the apple quarters with cut side up over the caramel, add cinnamon.
7. Place the pastry over the apples and fold the edges inside the pan. Prick the top with a fork, this will allow the steam to come out.
8. Bake for about 45-50 minutes until the crust is browned and cooked.
9. Allow to cool for 5 minutes. Place a serving platter over the top of the pan and carefully invert to release tarte from the pan.
