One of the richest and most typical pastry recipes of Majorcan cuisine, Coca de Apricots, or Coca d'Albercocs.
Ingredients:
- 6-8 apricots
- 200 grams of white sugar
- 100 grams of butter
- 250 grams of pastry flour
- 5 eggs
- 125 ml. sunflower oil
- 125 ml whole milk
1 envelope of chemical yeast, (16 grams)
- Icing sugar to decorate
- pinch of cinnamon powder
Baking time: 25 to 30 minutes at 175 degrees Celsius with top and bottom heat, no fan
