Hi Kaygee! This was really interesting. In another life I always thought that I might have studied architecture in some form. It is a fascinating subject. I'd never really considered how much must have to go into designing a commercial kitchen. It sounds like a challenging but rewarding area to work in! Thanks for watching. It is always good to get perspectives from people who have gone down the paths that they have, hence why I put this story of my career forward. Commercial Kitchens are indeed somewhat challenging and a niche area. You have to think about food storage, cold and frozen, cleaning of dishes/silverware, health requirements such as hand sinks, meat sinks, veggie sinks. You have to protect those sinks from backing up with what is called a hub drain. You have to know about various cooking equipment and also how to vent out the fumes from the kitchen and fire protection. Also the function and flow of the kitchen, how the food will make it from the cooking onto the plate and ready for the server to take it out to the customer. A lot to think about for sure!

The diversity although it seems normal to me now when I really break it down in my mind it can be overwhelming to understand the complexity of the areas that one is involved in when it comes to Architecture! It really is all encompassing in a lot of ways! It continues to be a path of life long learning which is very satisfying as a career choice!
