I think, your examples are still a form of virtue signaling instead of vice signaling. By calling herself a weapon owner, Harris gives a signal that she doesn't belong to the "delusional far left that thinks no one should be able to defend themselves", playing into the virtue of moderate Republicans, centrists, and probably quite a few Democrats as well. The cat on the shoulder says: "I'm not just a dumb, cold, hard jerk - I have feelings. I like animals, so I probably like children - I might even be a good father and a caring husband." You having cool interests and hobbies (what else is martial arts or weapons as long as you're not harming anyone?) paints you as a minister who isn't a hypocrite, isn't stuck up, isn't boring - but overall a reasonable, sociable man, who doesn't need to put on a sappy facade. That's virtue redefined.

Scot, once again you've hit the ball out of the park! I am not a fan of virtue-signaling or political correctness. I detest when woke organizations (yes, I occasionally visit one to see some old friends, but am not a member of it) try to force their own values on me. Particularly annoying to me is all the pronoun-shaming that goes on. There, one isn't cool or part of the in-club unless they write their pronouns on their name badge. If I'm pressed to state my pronouns, I pay homage to the movie "The Treasure Of Sierra Madre" and reply "Pronouns? We ain't got no pronouns. We don't need no pronouns. I don't have to show you any stinkin' pronouns!". Of course during the annual fund raising drive, you could always substitute the word "pledges" for "pronouns" in that quote🤣🤣😂.
