Sorrentinos are a very popular Argentinean pasta similar to Ravioli but larger and round in shape. This recipe presented here explains the classic Sorrentinos with ham and cheese filling dressed with a simple tomato sauce.
INGREDIENTS:
For the Dough:
300 gr of 00 or all-purpose flour
2 eggs
2 or 3 Tbsp of tap water
1 tbsp olive oil
1 pinch of salt
Filling:
300 gr of Muzzarella cheese
200 gr of cooked ham
50 gr of Parmesan cheese
1/2 onion chopped
1 tbsp of butter
1 heaping tbsp of flour
120 ml milk (1/2 cup)
1 Tbsp chopped parsley
Salt and pepper to taste
Tomato sauce:
500 gr of fresh tomatoes or 1 can of piled whole tomatoes
1/2 onion finely chopped
1 clove garlic
1 bay leaf
120 ml dry white wine (1/2 cup)
salt and pepper
If desired, drizzle with warm heavy cream and grated Parmesan cheese.
