Coffee roasting is an important process in coffee production. It is thanks to this roasting that the coffee has a unique flavor. The coffee beans are heated to high temperatures in several stages using the roaster.
The thermal shock initiates roasting. Desiccation then allows the water to evaporate from the coffee bean. The Maillard phase cooks the grain which changes color. It caramelizes and the flavors come out. Temperatures reach 205° during the first crack. For cooling, the beans come out of the roaster drum and are cooled quickly.

La torréfaction de café est un véritable art. Le torréfacteur décide réellement du goût que va avoir le café à la dégustation. Il choisit les arômes qui vont ressortir en bouche et qui donne son âme au café ! Belle découverte ! Merci

C'est exactement cela ! Le torréfacteur est avant tout un passionné de café, des grains, des arômes, des saveurs, du goût... La torréfaction de café est un art qui demande savoir-faire et maitrise.
