Farideh is making Ash-e Reshteh, a thick and herbaceous Persian noodle soup with four kinds of flavorful toppings. The soup, which is traditionally served in springtime for Nowruz, the Persian New Year, is made with copious amounts of greens like spinach, cilantro, parsley, and scallions. The soup is packed with green lentils, kidney beans, navy beans, and chickpeas, as well as enriched flour noodles. I am married to an Iranian and his mother taught me to cook this many years ago- God rest her soul she has now passed away. The only thing I could never get to like was kashk . I rely upon my brother in law who travel quite regularly back to Iran to bring me noodles, saffron and all the delicious things he have difficulty finding where I live in a small ex mining village in the valleys of south wales UK.

It's traditionally cooked at celebrations like weddings or alternatively funerals, on those occasions usually a huge batch is made and given out to the neighbors or even strangers passing by. God I miss Iran so much, amazing people.

Had this before at an Islamic centre gathering during Ramadan. It is incredibly savory and delicious. It being vegan friendly is also a plus.

Ash comes from the Zoroastrian era of Iran, ironically. It existed before Islam.

Just as extra information: "Soup" and "Ash" are different types of food in Iran. "Ash" is usually thicker than soup and is more like a main dish.

I made this for vegan guests so I only added Kashk for non vegan guests. It was truly amazing, with and without the kashk. The only thing I made differently was cooking the beans first and then adding the herbs and greens. Thanks for this recipe! ❤

You put the onions in the fridge for 10-15 min to cool them down before chopping and you won't cry. Works every time for me.

I like learning a bit about Iranian cultural stuff, it's a region I feel like you don't hear a lot about, at least outside of international news. This almost looks like the greens & beans my italian side would make. Some of the herbs are different, but I wonder if there's a connection.

This is an amazing dish. It comes fom the Zoroastrian era of Iran. The Sasanid Empire. It's one of the oldest recipes in Iranian/Persian cuisine.

Same as Ab Goosht, but instead of potatoes we put in grains such as Barley or Rye iirc. It was called Mayzad (دَرَونَ مَیزَد).

It's interesting, I've always heard that fresh cilantro should go at the end of the dish so that it doesn't lose its flavor. I'll have to try it like this

kashk is a dairy by product traditionally ... so depending on what your doin with your personal eating habits (def not vegan, could pass for vegetarian if your ok with dairy)

The trick to not cry while cutting onions or shallots is putting them into the refrigerator as a means decrease the temp so the organosulfur compounds dont vaporize into the air as fast.

Looks delicious! Now my aunt used to make Ash-e and she always made it with meat and potatoes bits (similar to keema aloo).. It was one of my favorite dishes. Does anyone know if that's a different type of Ash-e recipe? I'm not sure if my aunt made her own version of Ash-e or if there's a common version which includes meat that I could try to make?

Tip I heard was to leave the roots on right until the end cause that's where the worst of the fumey stuff is. So far this one worked best for me. I also heard to refrigerate them before cutting, or to rinse them under water regularly, for me those 2 tips haven't worked. I mean the water one kinda slightly works, but you have to rinse so often for it to work that it's not practical for a slight reduction in fumes. Maybe I need to try peeling, cutting in half, and soaking in the fridge, only thought of that idea as I was typing just now 🤔

Put the onions in the freezer for a few min before cutting . It the onion juice from atomizing and floating around to cause eye irratation

The chemical in onions that makes you cry is attracted to moisture (hence your eyes). If you place a wet paper towel on you’re cutting board as you’re chopping, you won’t cry!
