So, it seems like my opinion (the bit before と思います) is always in the casual form, regardless of whether the final verb is casual or formal.

Speech style (Formal or Informal) is only determined by the main verb (predicate) at the end. Having a plain form in the middle of the sentence doesn't affect the speech style whatsoever. When we quote things we think or someone said, the quoted part is always in plain form but it doesn't mean it was originally said or thought in Informal style. I hope this makes sense.

I learned „what do you think about a topic?“ like this: [topic]について どう 思いますか。 Is that particle について appropriate for daily conversation as well? Or does it give the sentence a slightly different meaning?

[topic]について means "regarding [topic]" or "concerning [topic]," and it sounds more formal and rigid. People would use [topic]についてどう思いますか for formal interviews or discussions, but not in daily conversation. I hope this helps!

Perhaps you meant to say アメリカは住みやすいと思いますよ。"I think America is a comfortable/easy place to live"?
