Edit: If you're looking for a bourbon to try, look for Bib and Tucker! Caramel and vanilla abound! Edit to an Edit: With your steak, season it heavily with salt about an hour or two before cooking and rest it in the fridge. Take it out and bring it to room temp. Add pepper and you'll have a perfectly salted steak!

What kind of pan is the stainless one you browned the garlic in? I see it's an all-clad, but is it vintage? it looks thick and the sides are super high.
japanese wagyu IS too rich for a lot of people(pun not intended btw, but it is pricey)id honestly call it an acquired taste because its literally almost 60% fat content for the purest selections you see in all those japanese teppanyaki's that pop up everywhere. its why they dont even need to oil the flat top grills, and cant be handled much when its room temperature, the oil in human hands is too warm and itll literally start to melt the steaks. in small doses, its incredible. its liquid gold, and id say if you can splurge, everyone should try it at least once. but for anyone wondering why you see such small portions of wagyu steak, its not just because its price is so exorbitant per kilo/pound, but just the sheer richness and fat content of it would make most people sick to their stomachs after about 6 ounces. american wagyu is cheaper, quite a bit more accessible (altho still not exactly budget friendly so dont go out of your way to break the bank to try it) and while not as rich, is still super tender and flavorful.
