#WithMe - Anyone here a fan of a lasagne or lasagna recipe? Well today, your dreams have come true because James has a Mystery Box Challenge where Mike will try to make a lasagne with 100 LAYERS using unused ingredients from our studio kitchen. This masterpiece was invented by Chef, Mark Ladner in 2009 for the New York City restaurant, Del Posto. That’s 50 layers of fresh pasta, in between another 50 layers of sauce. Sounds easy, right?
Watch now to see if Mike manages to pull it off in this self-isolation special!
Don’t panic, no ingredients were wasted in the making of this video. The result is currently frozen for Ben and James to try in person!

I ended up making a rather strange curry last night. First time I ever made a proper saucy curry. Last tin of coconut milk from the back of the cupboard and some tikka curry powder also from the depths of the back of the cupboard. End of a bag of frozen spinach, end of a bag of frozen mushrooms, my last red onion, last couple of cloves of fresh garlic, all served over the end of a bag of spaghetti. Absolutely delicious.

Spent a good chunk of yesterday morning trying to figure out that fussy one-pan egg sandwich recipe that's been going around. Not too difficult, but I badly botched the first attempt, did fantastic on the second, and the third was a decent pass. More importantly tho, it was the first time I've made anything since being hospitalized for a life-threatening (non-covid19) illness in March, and having a partial finger amputation a week ago. So it was simple, but it felt like a huge step!

PASS IT ON IN QUARANTINE EDITION IDEA!: They can take turns directing one person by video, but no one gets to hear what the prior one did, only start out their segment seeing what things look like. The person executing it doesn't get to object, make any decisions, or tell the speaker anything about what happened in the prior person's segment!

That's such a good idea! They could all start with a set amount of ingredients and then as the first person goes the rest just have the audio of the person saying instructions, and then it passes along so all of them are cooking all of it without knowing what the first person chose until they compare at the end

I love how Social Distancing Sorted has basically been "Let's figure out what kitchen supplies Mike doesn't have at his house and make him cook complicated stuff", lol. That whole 'clean as you go' is very much a chef thing. Whenever I'm cooking, I'm constantly cleaning up, and I've been retired from cheffing for 15 years. If only I could convince my wife to do the same thing when she bakes... I dont bitch too hard about the cleanup though...she makes stellar cookies. :]

They stopped being 'normals' quite awhile back. Their skill level is definitely at restaurant under chef level, but they're not really chef's either. Cheffing is as much about experience, and especially about being able to stay calm under pressure (or, at least being able to ignore the panic and power through it to get the job done) as it is about technical skill. While I would hire any of the three in a heartbeat were I still doing the chef thing, I know they would definitely require a couple years of seasoning and dealing with Line Crunch before they would be proper chefs. :) But I have no doubt all three would make STELLAR chefs if they chose to get that experience.

@@arklytte That's a little bit over the top, and makes me wonder what kind of restaurant you ever worked in. Barry is a foodie with no discernable skill in cooking. Jamie is the joker in the pack and would destroy any kitchen service. Mike did a great job here and seems to be the most serious of the bunch, but he would need to have James perched on his shoulder at every moment. They would require a couple of years seasoning, all right, but only after they had had a couple of years straight training in the first place. But sure, apart from training and experience, they're restaurant under chef level, whatever the fuck that means.

@@AlanHope2013 I agree. I wouldn't say under chef level, under cook level would be more appropriate. Might just be a misunderstanding to those who don't work in F&B tho because all they have to compare are the chefs and normals hence of course they'll be compared to the chefs.

@@AlanHope2013 If you require a CV, and are going to be a douchenozzle about it, here you go: I've worked everything from greasy spoon diners to hotel restaurants from one to four stars, corporate kitchens, mom & pop places, holes in the wall and places that seat hundreds. I've worked at pretty much every level you can work in catering, up to and including being the 'big cheese' for parties of 1000+ guests. I even spent about four years in a Michelin starred fine dining bistro. I've worked in fish houses, steak houses, bars, breweries, multiple fusion restaurants, and studied/cooked Mexican, Spanish, French, Italian, American (including multiple styles of bbq, southern, creole/cajun, and tex-mex), and Japanese cuisine. I started in the dish pit at a low down dive, worked my way up to line animal, went to culinary school, got restaurant management and culinary anthropology degrees in the process, worked several of the positions in a Brigade de Cuisine, including Saucier and Sous Chef (at the aforementioned bistro), and was even head chef at that four star hotel restaurant I mentioned. I retired from the game after 25+ years in, when I got tired of killing myself for 90+ hours a week and making less than my friends in the IT field working 50, which I now do. So yeah, I've got cred, asshole. And I meant exactly what I said. I'd hire any of the guys in an under chef (or demi-chef if you're using the French term...the fact that you didn't know that says far more about your (lack of) education than it does about my level of knowledge btw) capacity, with the understanding that they'd need a couple years seasoning as something like a Commis (ie, getting that Line Crunch experience I talked about). They, all three, have the ability to handle such a job...anyone that can make the dishes we've seen them make over the last several years, including, as a single example, something like Beef Wellington without a recipe, which Jamie and Barry have done, or, as another, when they've all made dishes out of Le Répertoire de la Cuisine, has the necessary *technical skill* to work in a fine dining restaurant. What they lack, AS I SAID, is *line experience*. A year or two as a Commis would give them than, then I'd bump them straight to Chef de partie (or Demi-Chef, or, again, *Under Chef*). That's what the fuck that means. Any more questions, you sanctimonious asshole?

Part of me thinks that James and Ben are trying to turn Mike into a chef by the time quarantine is over so the chef's won't be outnumbered anymore. I mean they've already got the other three calling themselves foodies now instead of "normals". The whole thing just smacks of a chef conspiracy to me, and given the success of all of Mike's dishes so far, I'd say it's working!

@@zahilakhan6496 yes but a wife doesn't have to be homeschooled, helped in the bathroom, distracted/entertained so you can get things done, or bargained with to go to sleep. I love kids, i do. But it's rough for parents being quarantined with kids of any age (i can't imagine dealing with a teenager not being able to go out 😱).

Personally, I didn't have a problem with 4, but I'm not the most artistic person (hence wanting a scientific data driven response).

My favourite thing about these cooking-from-home videos is that it really shows the reality of how messy and chaotic it can be when you try to do "one of those cool/fancy things you saw on youtube" in your tiny kitchen with limited...stuff! Like Mike not having another big pan, solves it with a huge creuset dish, there's not enough room on the stove and there's tomato sauce everywhere. Exactly what it looks like for me!

ok, curious how mike went from "i don't have a food processor." for the tomatoes to having a food processor for the soffritto within minutes. also, have to say, this is most impressive. the pure amount of work, dedication and precision to make something like this i couldn't have done on my best of days. top things off with a likely two days of scrubbing dishes and you have my mad respect. that being said. of someone of italian descent, yeah, i own a stand mixer. i never use it for pasta though. somethings just need be felt by hand.

FantasticFabio of course, I know. Are unicorns real? Of course they aren’t but people talk about them every time. The fact that Janice isn’t real doesn’t make me less of a Janice fan. Her sassiness is as beautiful as a unicorn prancing on a freshly mown mint field 😍

Thanks for the idea, making a vegetarian version of this (56 layers in the end) kept a bored, nearly teenager, busy for most of an afternoon. It looked good and tasted great as well.

Seeing this 3 years after the event but it was great fun to watch and a great frustration not to be able to have a slice because it looked absolutely delicious.
