I discovered another thing as a child, being that my dad and his family was from Appalachia. Now, biscuits and gravy was a staple for me too because my southern mama was the cook. But my "other grandma" was from Appalachia and they make a thing called "chocolate gravy". Biscuits are the same, but chocolate gravy for a kid was like being ushered straight into heaven. Supposedly "po' folk" food, but if so them fancy rich people are missing out. And I think it's mostly just cocoa powder, sugar, and water or something. I only know my mama taught my wife at some point and she makes it every once in a while and it's just far too good to be real.

Ahh, just warms my heart to watch someone experiencing the bliss of comfort food. It’s like being a little child again, being wrapped up in your favorite blanket on a chilly day, while your mother holds you on her lap, rocking you in a rocking chair. Isn’t it funny how this is such a thing now, watching people eat food you personally love? If we could go back in time decades ago and tell ourselves we’d watch videos of cats, and people trying food. Lol Oh well, I still love it!

I'm convinced the reason most people outside the southern US don't like breakfast gravy is because they've never had it made right. If your gravy is white, you made it wrong. If your sausage isn't browned to at least partially crispy, you made it wrong. Fry up bacon, sausage, or fried chicken, reserve 2-3 tablespoons of the fry oil. Lower the heat on the fry oil so it doesn't burn but keep it hot. Sprinkle in the flour and stir it around while you fry off the moisture in the flour, the roux should get to at least a chestnut color. Add the milk a bit at a time and stir it in until it's a liquid and not a paste, then pour in the rest while you stir. Once the gravy begins to thicken, salt and pepper to taste, and I lean heavy on the freshly ground black pepper. The best gravy is made with hot (spicy) breakfast sausage. I prefer to fry them round and make sure they have a crust on them like a good steak. Then use the oil the sausage was fried in to make the gravy.

As a native to the southern USA, I watched you cook everything closely, you did good, glad you liked our little breakfast. Keep that recipe in the pocket for friends and family. The biscuits are multi purpose for breakfast, and the gravy, if you use instead of sausage, butter or just bacon grease, and make just a smooth gravy it goes great on mashed potatoes and fried chicken, and chicken fried streak.

This makes me so happy. A couple notes on your biscuit making: The enemy of biscuits is stretched gluten, so use a flour made from soft winter wheat if available. Basically you want the opposite of what you'd want in a flour you'd use for making pizza. Also, never use a rolling pin to work the dough. Press it down with your hands, then fold. Repeat exactly five times. If you want your biscuits uniform, use a cold plate. Just anything to avoid stretching.

My mom would make this when I was young. Some times she wouldn't wouldn't have sausage. She would use a spoonful or two of bacon drippings as the fat to thicken the gravy. In the summer when hot peppers were ripening, in our garden, she would dice a few of them and cook them with the gravy. Thin sliced dried beef also is top notch choice. P.S. Strawberry jam on a biscuit is out of this world!!!

As a southerner in the US who has been making these and eating these since I was old enough to consume solid food, GOOD JOB making that. A lot, well, MOST of the vids I see where someone not from the Southern US that tries to make this dish will almost always do it wrong, and as a person from the aria where this dish originated from, let me tell you, it is easy to see the mistakes that are made. You sir did your research, and those biscuits would have made my grandmother proud. The gravy, spot on. You really did not need the cream, milk alone is fine, but that sir is the real deal. Good Job!

Biscuits and Gravy is an American tradition almost as old as America itself. It's a meal every class of person has eaten too, but was especially common among the poor as it was a very cheap meal to make and remained so through most of America' s history. My grandparents used to talk about eating it on the regular growing up in the depression, and even my father talks about it and SOS - a sort of variation on it - as he grew up not so wealthy himself. I grew up eating it because my dad would make it all the time lol, so it's a comfort food for me. It made me so happy to see you enjoy it as much as I always do. Cheers!

I like it with bacon sometimes too instead of sausage. Growing up when we didn't have a lot of money mom would take potatoes and dice them up and toss them with some flour and salt and pepper and fry them. When the potatoes were brown she would put them on a paper towel and use the grease from the fried potatoes to make gravy. Scrambled or fried eggs are good as a side dish.
