👨🍳 Ingredients You’ll Need:
Daal & Rajma
Whole urad dal - 200-250g
Rajma - 50-70g
For Cooking:
Butter - As needed
Green cardamoms - 2-3
Black cardamoms - 1-2
Cinnamon stick - 1
Peppercorns - 1 Tsp
Cumin seeds (jeera) - 1 Tsp
Slit green chilies - 3-4
Chopped onions - 2-3 medium
Chopped garlic: 1 Tbsp
Chopped ginger - 1.5 Tbsp
Turmeric powder (haldi)- 2/3 Tsp
Red Chilli powder - 2 Tsp
Coriander powder - 1 Tsp
Garam masala - 1 Tsp
Kasuri methi (dried fenugreek leaves) - 1 Tsp
Tomato puree - 300g
Salt - To taste

For Serving:
Vada or balle (soaked in water) - As needed
Sweet curd - As needed
Green chutney - As needed
Tamarind chutney: As needed
Chaat masala: To taste
Red chilli powder: To taste
Pomegranate seeds: For garnish
Cheese naan: As needed
Process:
• Soak the Lentils: Soak urad dal and rajma overnight.
• Cook the Lentils: In a pressure cooker, add soaked lentils that are double the weight of water. Cook for 3 whistles.
• Prepare the Base: In a vessel, heat a little butter. Add green and black cardamoms, cinnamon sticks, peppercorns, and cumin seeds. Saute briefly. Add slit green chillies and chopped onions. Cook until caramelized. Stir in chopped garlic and ginger. Mix well.
• Spices and Tomato: Add turmeric, red chilli powder, coriander powder, garam masala, and kasuri methi. Mix thoroughly. Pour in the tomato puree, add salt, and saute well.
• Combine Daal: Add the cooked urad dal and rajma along with their stock. Mix well. Stir in some Rich’s Versatile Gold Cooking Cream for richness.
• Prepare the Serving: In a bowl, soak the vada in water. Split the vada and top with sweet curd mixed with cream. Add green and tamarind chutneys, sprinkle chaat masala and red chilli powder, and garnish with pomegranate.
• Serve: Serve Daal Makhni alongside cheese naan.
