We had great results with this dish following this video. No measurements or anything required - just eyeballed it all. My only variation was to use a 16oz can of diced tomatoes and a small tin of tomato paste. Taste and texture were perfect. I could have gone heavier on the chilli powder but very very rich and flavourful in any case. My only complaint was in using the whole garam masala of cardamom, clove, cinnamon and bay leaf. Easy, of course, to pick out the cinnamon sticks and bay leaves but a bit of a pain in the ass picking out the cloves and cardamom pods before serving. As well as the food, the chef seems like a very nice man!

I made this yesterday! without onions!. i decided to make it simpler - one pot recipe. i sauted the ginger garlic n then tomato, added spices and then the soaked dals. n pressure cooked for 30 mins on low heat. The whole house smelled like a restaurant! i added salt later. Guys, trust me.. u dont even need butter or cream.. the dal tasted so good! i put tons of ginger n garlic paste. in the end, added little butter for the kick n some whole fat goats milk!... thanx @vahchef ! your recipe is amazing!

One way to further add flavor is to cook the dal overnight in a slow cooker instead of soaking in water and using pressure cooker. Instead of water, I use chicken or vegetarian broth. Also I add salt, onion, garlic, couple of whole green jalpeno and ginger.

While cooking it overnight on low flame doesn't the daal burns?

stallio nope, you just need to put ample amount of water in the dal for slow cooking. 10 times atleast.

I am a HUGEEE dal makhani fan! I never eat Indian food in a restaurant without this and I have eaten it at more than 600 restaurants (all over India) but have very rarely found the exact taste. But I made this and this was the PERFECT taste. Haven't ever eaten a better one! took me more than 3 hours to make this but it was all worth it! Thanks a lot VahChef!

The best thing to make sure the daal is soft is to use a ratio of 1:8 of dal and water. Add some salt and then after the first whistle..let it simmer for 25-30 minutes..without getting the whistle to blow.Make sure the whistle is sizzling but it doesnt blow completely.I do it everytime and I get the best results.

I just prepared this dish exactly as specified EXCEPT i didn't pressure cook it, rather i soaked it overnight and then cooked it in a crock pot for about 8-9 hours. It turned out simply AMAZING! The only thing i would suggest is to go easy on the whole garam masala spices, as they can be overpowering if you cook them in a crock pot for a long time.

A couple of thoughts here. You can cut down on the dairy and still have a delicious dish. I "only" use 1/2 stick butter. Also, I've found the best lentil for this dish to be toor dal. Finally, I put the whole spices in a metal container like is used for steeping tea so I don't have to fish them out afterwards.

@magwep Yes, In authentic punjabi cuisine butter is used in large amounts. The richness from the amount of butter used is generally regarded as a symbol for how much the cook likes you. However, cream is still used to flavor dishes- just not as much as in westernized restaurants. Half a cup of cream in a gravy like this, big enough to serve 8+ people is pretty standard.

Hi I tried a technique and would like to share with you. Though I don't have Tandoor, I boiled the Dal continuously for 6 hours. I didn't use pressure cooker. First for half an hour , I boiled the Dal on medium flame and then I kept that steel vessel containing the dal on an induction plate and got it cooked at the Lowest temperature for 6 hours. I have got the smooth texture. You may mix 50 grams of white urad Dal ( without peels) been roasted along with 250 grams of black Dal ( with peels ) while boiling. This will give better taste.( I know this isn't the authentic procedure but gives better taste). Regards Vivek

@shinenshimmer I just finished making this dish(5:00 AM for me, Dal Makhini and some roti for breakfast, Haha!) and as long as you cook the tomato and dal for around half an hour, and add cream which is NOT very cold from refrigerator, it will not curdle at all. Just do it exactly like vahchef and you will be fine.

Wow. What a great recipe. I've been struggling to make decent Indian recipes for my Indian boyfriend for two years. Being Korean I'm not familiar with many of the spices or steps in Indian cooking. This dish came out amazing! My boyfriend even said it tasted better than the way his relatives make it I added coriander leaves at the end and only put 2\3 stick of butter and half cup of cream. Never the less came out so delicious. Many thanks for your post. This recipe will be going into my regular round of recipes.

Only black urad dal not moong dal, Green moong dal can be soaked along with 1/5th rice (45 mins) and ground to a batter along with 2 green chilies, salt and coriander leaves in a mixie. Spread this batter on an oiled tawa like dosa. Heat both sides. This is called pesarattu. One can sprinkle some finely chopped onions immediately after spreading the batter on the tawa so onion pieces get stuck to the wet batter before it dries. On turning it over, onion too gets cooked. Eat with Coconut Chutney

Ginger garlic paste is 50:50 fresh ginger to fresh garlic. Looks like the "whole" garam masala is equal parts by sight of the herbs/spices used in it (ie. 3-4 cardamom pods, 1-2 bay leaves, 1/2 stick cinnamon, 4-5 cloves, not 100% sure on quantities, just look at a good garam masala recipe and use the whole ones instead of crushing)

Hi Veh Chef - i made the daal without kastori methi and it was really really tasty , I added double cream and butter, which was delicious- for some reason I was really reluctant in adding it to the daal. I wondered how does the taste change or enhance of daal with methi??
