Recheado Bangda is prepared by giving slits to the fish and stuffing a special traditional masala in it. Then the fish is coated with semolina and then shallow fried in hot oil.
Ingredients:
2 Indian Mackerel (Bangda)
1 tsp Mustard Seeds
1 tsp Fennel Seeds
20 Kashmiri Red Chillies soaked in vinegar for 30 minutes.
1 inch Ginger
8 Garlic
5-6 Black Pepper
1/2 tsp Coriander Seeds
1/2 tsp Cumin Seeds
2 Cardamom
4 Cloves
1 inch Cinnamon
1/2 tsp Turmeric powder
1/2 tsp Sugar
1 Onion, chopped and sauteed
Semolina
Oil
Salt to taste
Method:
Dry roast the mustard seeds and fennel seeds. Keep them aside till further use.
In a mixer grinder add soaked red chillies, ginger, garlic, black pepper, coriander seeds, cumin seeds, cardamom, cloves, cinnamon, turmeric powder, sugar, sauteed onion, roasted mustard seeds and fennel seeds, salt. Grind everything to a smooth paste.
Heat some oil for shallow frying.
Apply this paste to the fish and also stuff some inside the fish.
Coat the fish in semolina and shallow fry it on both the sides.
Recheado Mackerel is ready to serve.
