Carissa, Iwan & Frankie decided one night over a bottle of wine that moving from North Wales to Portugal would be a good idea. Within a month they were on the road to Portugal to find the perfect piece of land to call their new home. We picked up Albi the cat along the way. Subscribe to follow our journey as we turn an old stone barn into our home, and learn the ropes of looking after a piece of land to make an abundant garden and one day, our very own winery.

That was the cutest little olive tree,, that must become "baby olive oil" and not virgin olive oil :-) I now have a house with 7 olive trees in Portugal. Nick was so awesome to go with me, to check it out,, and give me a second opinion on the build quality,, I guess I owe him a whole lot of painting as well :-)

Hi ive been watching your videos and have got half way through them. I love what you are doing. One thing I wanted to share about all your Quince trees. You can dice them up and stew them with honey...they turn a lovely soft pink colour and taste like a pearl but only more floral.They are really lovely.

Thanks for another glimpse into your lives. I appreciate the detailed info on the olive processing, and found Iwan’s prowess with “olive in the water bucket” rather amusing. Love watching the videos which share your interactions with Nick and Andrea. Lovely to see those furry interactions on the couch and as always Carissa’s artistic eye and soul throughout. We’re very happy with the size, we came to Portugal wanting hectares and hectares but realised very quickly how much work that would involve to keep it clean every year!

There is a channel in Positano, Italy that wraps their olive trees in shade cloth (i think it is) ties up the wrap and shakes off or rakes off all the olives, making a big giant bag of olives for each or several trees. They have soooo many trees so lots of people do it. So interesting. It is "Positano Diaries" but they only do once a year.

@@seeingyouontube I don't think anyone needs a "wish list" for one tarp. Not that big of a deal. Maybe an amazon wish list might be good for other items that they really could use. Since they are a new homestead they probably have LOTS of wishes for the wish list. People who are just starting out usually have LOTS OF THINGS that they could put on their wish list. Gee i wish i had..... Pumps for their wells, etc.....

I seem to recall that in wine making, the stems are what contribute the tannin component, so while stems are essential in red wines, some stems should also be included in most whites. If making some "quick wine" to drink quite young, then perhaps that is less than essential since the tanins have impact longer term more than short, who knows if they are essential or not. Experimentation and note-taking always helps!

You’re exactly right! This is a bit of an experiment to see what a young wine will taste like - last year I made a white wine for ageing and kept all the stalks, same with this years red. It’s all so interesting!

Iwan and hus arm full off girls were so adorbs. Your rainy glade walk was pretty... i wondered if you might be at Nick & Andrea's. It's so good you can help them, too. That soup looked delish. Have you thought about making no dig beds in your garden with woodchip mulch between them as walkways? Do you follow the channel make do grow? They have some great beds and as well are working on their home. They are also in Portugal from what Nick said about 2 hours from your area. I do enjoy your channel and the things you two get up to, and it warmed my heart how you helped your new addition to your household.

Hi Ziggy, I love the no dig method. I think it would be too expensive for us at the moment to buy so much compost and wood chip. So we're combining lots of different gardening principals. We love Make Do Grows channel :D have learnt a lot from them

The tradition in Portugal for quince is to make marmelade (in fact, the word "marmelade" comes from the quince fruit name in Portuguese - "marmelo"). Will you make some?

That salad looked very pretty. So nice you guys help each other out. The soup at Nick's looked yummy. I have to try that soon with my pumpkins. Diogo and Albi are so cute, like our cat and dog. Hope the wine turns out good. I am addicted to green grapes, I don't buy them anymore because of the sugar and I am diabetic. The olive fermentation is interesting. I didn't realize so much salt was used. We are having our second atmospheric river in 3 days. It is nice though after such a long dry spell and later harvest. Cheers to you all.

Here in Crete we have around xx million olive trees. My local groves make sure to cut the grass/undergrowth around the trees and that seems to cut down the fly problem.

It took me a while to say this but I don't like the hurried parts. I mostly close my eyes until it gets over. I'm curious how to make sure/stop the dogs from eating the grapes that are lying around? My dog is a forager and had a fruit salad on our walk a few months ago, blackberries (picked off the bush himself), apple(windfallen) and plum(also windfall)

Frankie’s not interested in them at all, Diogo loves them, it’s basically impossible to stop him. The grape toxicity worried us a lot to begin with, but we met a dog in Germany a few years ago that used to eat kilos of grapes a day and never had any issues 🤷‍♂️

Hi Dawn, yep our goal is to finish the kitchen first which should happen over the next month (we did start in the last video). We’ll start on the barn then which will eventually become our bedroom. we have lots of big plans but we have to save up for each project as we didn’t arrive with a lump sum of money for rebuilding. We did also buy this place because of the land - that’s what we’re most passionate and excited about.

So how do you get rid of olive fly naturally? Your little baby olive tree gave a good crop forit size. Now correct me if I am wrong was it so many olives for the pot, 1 for the mouth, so many Ives for the pot, 1 for the mouth on a repeat cycle several times😛. I do enjoy your video's, I find them quite relaxing. Not sure if itis the music or the softly spoken clarissa voice. The land is lookng stunning. . Also on the shirts, I am a UK 18😒 so will 1 fit me? The locals spray their olives with something in summer time - not the route we want to take really but we may have to. Haha you’d be sick after two olives straight from the tree I think, you can’t eat them as they’re so bitter! You mean the shirts off RU-vid? I think you can choose a size? I’ll check. X

Apparently you get more fruit from prolonged sunlight? Maybe put it somewhere with more sun next year? By all accounts they have more productive years so maybe next year will be better?

You get the most oil from darker olives, but more flavour from greener ones. We aimed for 50/50 last year and it turned out super tasty and we got a decent amount of oil - 46lts from 460kgs. This year we’re not going to have anywhere near as much.

The flies aren’t a problem if you’re going to press them. Only if you’re going to brine them.

Yes we did almost all of them last year and managed to harvest 460kgs which turned into 45ish litres. We’re no where near that this year

@@FrankieOffGrid When you need yolks for lemon/lime curd or flan, enjoy the egg whites as omelette with cheese, green onion, parsley or basil, etc 😋
