Homemade Donairs and Sauce - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making Homemade Donairs and Sauce. Made with lean ground beef and ground turkey, plus a few tasty seasonings and spices.

Ingredients:
1 pound lean ground beef ½ pound ground pork or turkey
2 tbsp flour ½ tsp black pepper
1 tsp sea salt 1 tsp onion powder
1 to 1½ tsp garlic powder, or fresh clove 1 tsp ground Italian seasonings
½ tsp ground coriander 1/8 tsp cayenne pepper
Method:
In a bowl, add all ingredients and work it together by hand or by a mixer with hook. After knead seasoned meat with hand by folding the meat to work it more together and all combined.
Do this in the bowl or on the counter.
You will need 8 x 4 inch pan, 1 metal skewer, foil wrap.
First, take the meat and put on foil wrap and form a long rolled log. Wrapping with foil. Take the metal skewer and poke through both ends, then pinch the side around the skewer and put in the fridge for 1 hour to overnight until all seasoning got time to marinate and the spices build more flavours.
Then remove from fridge and place on 9 x 6 inch pan, long ways so skewers are resting on the sides.
Then preheat oven to 350ºF and place pan on centre rack and bake for 1½ hours or until baked. Depending on your oven! Internal temperature is 180ºF
When baked remove from oven and place on cooling rack for 5 minutes or until room temperature, this would be easier to shave small slices of meat from donair log.
Or bake in the Air fryer if you have a rotisserie attachment, set unit to the rotisserie temperature and start.
Cook until the internal temperature is 180ºf and baked.
Then put donair log on your cutting board, let rest for 5 minutes. Then thinly slice long ways.
Serve on flat bread, taco wraps, or regular bread, chopped tomato, raw onions and slivers of lettuce.
DONAIR SAUCE
Recipe:
½ cup milk ½ cup water
1½ tsp garlic powder ½ tsp sea salt
1 tsp canola or vegetable oil 2 tbsp cornstarch
2 tbsp vinegar 2 tbsp white sugar, more to taste
Method:
In a small saucepan on medium heat, add milk, garlic, sugar, sea salt, oil and slow mix together.
"Then a vinegar and whisk well. "
Then add to a measuring cup water and cornstarch, mix well and slowly add to saucepan stirring until thickened.Taste sauce and add more sugar or garlic to your taste……
Bonita’s Special Note:
This recipe is a viewers request, it’s not a NL traditional recipe but it have been available here in a few restaurants for over 30 years or more. The younger generation got use to this spicy seasoned meat served on flat bread and topped with a sweet donair sauce. This is not anywhere close to the original donairs and sauce recipe, but a mixture of spices that taste close to the donair I remember eating. Enjoy!

Thank you so much for this, we also discovered you can make Donair Sauce by using 1 can sweetened condensed milk, ¼ cup vinegar and ½ tsp garlic powder, stir well, refrigerate overnight. Delicious

Yes indeed its a lovely recipe and not our traditional food. It was from other places and have been introduced to our cultural in restaurants and grocery stores. Our younger generations have enjoyed this type of fast food here for many years. This is just a recipe I put together for anyone to try making it at home for a taste of what it is. This was also a viewers request to help them make it at home to share with their friends and family....... Enjoy Bonita

A very unique recipe. I too had never heard of a Donair. Here in Chicago the loaf would be a beef/lamb base with a thick Greek yogurt 'savory' sauce served on a pita bread. I'll definitely give this one a try. The sweet garlic sauce sounds interesting. Thanks for sharing the tasty goodness.

The younger generations have enjoyed this type of sandwich for quick and tasty lunches and meals. It is very tasty and can be served on pita bread or between two pieces of bread. Love you Bonita! I grew up in Sydney, Nova Scotia but live in Halifax now. A lot of people don't understand the difference between a "Gyro" and a "Donair". I guess the real difference is that a donair has a very sweet and garlicky sauce, and a gyro has more of a tzatziki sauce. I know I much prefer a donair! I worked at a Pizza Delight in high school and we used condensed milk to make our donair sauce. I used to make it in 5 gallon buckets! We used to use condensed milk, garlic powder, and vinegar. The vinegar would separate the milk solids and make a delicious creamy sauce.

you can also make it on some pizza dough and bake it with the sause n cheese! add the veggies after it comes out of the oven and add more sause. yummm yumm yum!!!

Bonita...I'm a huge fan of your channel. I think this might help Raymond with the sauce...if you make your recipe again. To get authentic sauce try this. To make the donair sauce, use 1 (12 fluid ounce) can evaporated milk * 1/3 cup white sugar * 2 teaspoons garlic powder * 5 teaspoons white vinegar...don't mix it in until you read below! Mix together the evaporated milk, sugar and garlic powder in a large bowl. Stir VIGOURSLY until the sugar dissolves completely. THIS NEXY STEP IS CRITICAL...follow exactly....whisk the mixture quickly (the mixture should be frothy at this point) and while whisking add the vinegar ALL AT ONCE....continue to whisk for 5 more times AND STOP!!!!! If you continue to mix, or add only a little at a time it will be runny...let the vinegar do it's thing (whatever chemical reaction it is...) Do it like this and you will have a thick sauce that is the right consistency and is sweet....without being too sweet. It is best used the same day.

My Mother used to make this with a variation. She would add, I believe 1 tsp. of Liquid Smoke, then bake it slow in the foil. We would take it on long car trips as it chilled and stayed well in the cooler. It was always good.

Will be making this for sure this winter in Ontario . Can you use Virgin Olive Oil instead of canola or vegetable oil ? Would that make a big taste difference ?

It's not available everywhere, I guess in some places where this type of food would be enjoyed it will be available. We have it in many restaurants and grocery stores here in NL. But I had a request from a viewer who loved having these Donairs when living back home and she wanted to make it for her friends and family away. Doner sandwiches originated in Turkey. Turks immigrated to Germany and it became popular there. The Greeks have a similar sandwich: the gyro (pronounced: yee-roe). In the USA, during the 1970s, Greeks immigrated to the USA and they bought pizzerias, where they sell gyros. How doners became popular in Halifax, Nova Scotia, I don't know.

They were brought by Lebanese people who couldn’t find traditional ingredients at that time, so they made the best of what they could find, and this variation has become traditional Halifax cuisine
