Diabetic friendly bread substitute made with AVOCADOS! We watched our friend Marshall over at Country Boy Cooking with Marshall make this a few weeks ago and decided to try it. This bread was fantastic and we plan to make it over and over as part of our clean eating plan to get healthier!
All you need is a ripe Avocado, 1/2 cup shredded cheese of your choice (we used parmesan) (Note: Marshall used a whole cup, but we're cutting back on dairy) and 1 egg. Mash those up together and make a "dough", press onto parchment covered cookie sheet. If you like, sprinkle with a seasoning of your choice (like Everything Bagel) and bake for 30 minutes at 350 degrees. Let cool for 15 minutes or so, and cut up into breadslice pieces. Next time, we're doubling this recipe to make more!
