As a Moroccan I just wanna tell you, you did so good. My first time making pastilla was a disaster to say the least. We do some steps differently in our family recipe but overall I can see from the ingredients that yours tasted goods. Also you can make pastilla with seafood too.. you can say a fusion of Asian (because we use soya sauce in this recipe) and Moroccan cuisines. As for the remaining Ras Elhanout you can use it to cook roasted Moroccan chicken with olives and many other traditional dishes.

Tip to use saffron if your worried about it expiring. You can make saffron tea. Just like 6-7 pieces gives you a really floral tea that I like drinking cold
