Hi Shani, thank you, Now that I am older I can appreciate my grandmother more for the things she did. Sometimes while making certain dishes, I am reminded of something we did that was common on the Island. I enjoy sharing those stories cause I know most people growing in those times shared the same experiences

The lemon peel are only to cut down on the rawness' of the eggs. The peel does not dissolve and there are not chopped up in the mixer. Give it try and let me know what you think

I do not call it pudding. Remember that plum pudding came to the Caribbean with the British which is similar to our now fruit cake. They also brough victoria sponge which is that yellow cake, the slaves just called it pudding and so it continued. Puddings are soft and liquidy, the English still love their puddings. The butter and color of the egg yolks are what made cake my grannies baked look different than what we get now.
