If anyone wants to make this “keto friendly” just omit the panko breadcrumbs. It’s delicious.

My method is to bake the breaded chicken breast in the oven - turning once - to crisp both sides. Then layer the partially cooked breasts in a baking pan over 2 to 3 cups of marinara sauce (or as you like). Add mozzarella cheese and Parmesan then back into the oven until completely cooked.
