I made this tonight and I have to say, it was amazing and ALL my family LOVED it!!! I cooked bacon first and I only had two cups of stock so I had to add water instead because I couldn’t find my bullion cubes, but I think with the bacon drippings it wasn’t so bad. This is an amazing recipe!!! I had rolls instead of bread bowls. We absolutely love this recipe and we adored it, thank you so much for sharing!!!

Yes, some have a higher starch content than others. But you can use any kind that you like, and if it's too thick just add a little bit of milk to it 😃
Do you thunk i could shred the potatoes instead of cubing them? I've seen a few recipes with frozen shredded but I try to stay away from frozen and keep things fresh.
If you make them any smaller they will dissolve into the soup. Not a bad thing , it just would be a different texture and you won't have little pieces of potato later. It will make a creamier soup too so if it's a little too thick for you add some more stock to thin it out 💕
No, I cook them in the broth BEFORE adding any dairy. If you heat the dairy too much it will curdle on you so you want to make sure that the potatoes are completely done before you add the cheese and milk products 💕
