I love Mr. Booth - he's such a wonderful addition and comfort to watch. I'm an artist/writer/actress (also singer/dancer) and do abstract art - I wouldn't say Mr. Booth was the artist type - he looks like he'd work in a solid profession like accountancy, bank managing, corporate management, marketing something but art - from looking at him wouldn't say so. I'd be exactly the same with the yeast. May I ask why Stanley does not speak with a crisp British accent but sounds distinctly American? I am sharing this everywhere - I love to see this level of normality and joy/happiness in life - Praise God - all of this grace (no pun) and joy comes from HIM!!!! Grace, a big reason your dough was wet and you needed to add the additional bit of flour might be because you could have been using a recipe developed in the US. The wheat used for flour in the US is a different kind than used in Europe, and it is definitely more absorbent. If you're using an American bread recipe, I suggest reserving at least 10% of the water,r and only adding it if needed. I (an American baker who lives in Europe) have found that's the best technique to get my old recipes to turn out the same here! I know the recipe says you can add more flour, but as a baker you surely also understand how that is a bummer for things like perfect salt balance and such.
