Ingredients:
4 Tablespoons unsalted butter (57g)
¼ cup oil (60ml)
1 cup granulated sugar (200g)
2 large eggs
1 ½ teaspoons vanilla extract
½ cup buttermilk, greek yogurt or sour cream
1 ¾ cup all-purpose flour (220g)
2 teaspoons baking powder
2 teaspoons corn starch
½ teaspoon table salt
1 cup chocolate chips
Directions:
Melt the butter and combine it with the oil, sugar, eggs, vanilla and yogurt. Once mixed well, add the remaining dry ingredients and gently fold in. Once it's almost mixed, add the mix in of your choice and pour the batter into a large ziplock bag. Refrigerate overnight. The next day preheat the over to 425 F. line either 6 jumbo muffins or 9 regular muffins with liners and pipe the cold batter into the liners. Bake for 8 minutes then without opening the oven, lower the temp to 350. Bake for a remaining 8 minutes or for jumbo size 15 minutes. Enjoy!
