You can certainly omit the cinnamon and clove from this recipe. You could also substitute them with allspice or cardamom!

Is there a reason for not using riper bananas? And a tsp of cloves seems a bit much. As for the disclaimers I agree on safety. However, regarding the comment about weakening the jars by baking has never been a problem for me. I still have every jar after years of multiple use. Both Ball and Kerr (which is now owned by Ball) work equally well. I've made cranberry orange nut bread, pumpkin bread, zucinni bread and even pound cake in these jars sucessfully.

Love it! I am sending cake in jar to my friends that are deployed. I know they would love banana bread but I'm not so sure how it would hold up going all that way...

Katoasha Smith You can also do spice cake, lemon cake, any cake without icing. if you want to do cookies; take powdered sugar and sprinkle between cookies and make sure the jar is hot and the lids are hot but dry and if they don't click after 24 hours sitting on the counter on a towel send. We do molasses cookies, peanut butter, chocolate,( take coco and powdered sugar between these), sugar cookies with lemon sugar between these. As long as the jars are hot; but dry and the lids are hot but dry it should seal. and the guys love these. If they click the next day; don't send those jars; didn't seal. Always use the wide mouth jars; easier to get the goodies out of. The old 1940 cookbooks have the best recipes in for these cakes and cookies. Hope this helps; we all have to look after each other. You need to look a bit closer at the USDA standards for home canning. There you will find the information you are looking for. You can also consult your local Agricultural Extension office for more information on proper canning procedure. Canning things improperly can lead to sickness, food poisoning and in some cases death. Do so at your own risk.

True, even though she says to store them in the fridge for up to a week, it is important to be really careful because people could mistake 'bread baked in a jar' for actually being canned and shelf stable. A lot of people do in fact.

These are called 'can and freeze' jars. so just put the jars in the freezer after they cool off and they should be good for a very long time.

what is the shelf life of this ? will the shelf life be bigger if we dont add eggs or milk ?

When I Posted my " Canned Banana Bread Video..I posted to leas than THREE disclaimers saying that this is NT a recommended practice..health Canada and the fda Do not recommend canning banana bread...at the very least this video should have a " do this at your own risk" disclaimer!

This isn't a product for conventional long term storage and the narrator makes this clear "can be kept in the fridge for a week". This is a rather expensive little gift for the hostess when visiting a home, staff members, neighbors, kid's teachers, etc. Its a unique variation to the traditional mini-loafs we make during the holidays and wrap in colored plastic wrap and pretty ribbons. The cost of the canning jars and lids/rings is rather prohibitive, but it is a very pretty idea.

As stated in the video to "Enjoy right away or store in refrigerator for up to a week" - I was wondering, why bother with the extra work of "proper" canning if you can't store it any longer than a week? It's good to know you can store it long-term if desired. I'd probably just skip the canning part and make sure the bread is eaten within a week though. :p I do want to experiment with baking the "no-knead" bread in vessels other than the traditional, but haven't found any info online yet (other than your thoughtful comment). :)

@@creativeplanetjanet There is no canning part, it's just baked in a jar and then the lid is put on while hot. It's just a vapor seal, not canning. One could completely skip the lid. It's just aesthetic.

There are others on You Tube that say the opposite! They say tat baking the breads/cakes in the oven also weakens the jars. Just research this before you do it.

Putting the lid on makes no difference because it is not canned, just baked and then vacuum sealed. It should not be treated like a canned good. The jar is just replacing a baking pan

Unfortunately, Mile Denise, Allrecipes isn't set for that function. As an alternative, click the link to open the original recipe.-- it's this one (find it at the top of the page right below the "Published on" date) allrecipes.com/Recipe/Banana-Nut-Bread-Baked-in-a-Jar/Detail.aspx -- and then paste it into Google Translate for a translation. Not at all, Kim Graber. Canning jars are tempered glass so they can stand hot water. Look for brands labeled food-safe and produced specifically for canning.

@@allrecipes If you call the manufacturers they will specifically warn against baking in these jars. You can do steam baking (like Boston brown bread, but in a jar rather than a can) and it works great!

This should not be considered a shelf stable product! This is a novelty and not used as a long term canning option. You should do your research on canning to make sure you understand what is proper and what is not. The USDA does not recommend canning cakes and quick breads such as this and they should be done at your own risk. They indicate in the video that they can be stored up to a week in the refrigerator not on the shelf. That being said, you should really not can cakes like this.

I have been canning for 25 years. In my opinion I am disappointed that you have not put a disclaimer in the video to inform people that this should be done at their own risk. Canning cakes and quick breads is not approved or recommended by the USDA. It is not recognized as safe. While I understand that you have indicated that the breads should be stored in the fridge, there are some people who will assume that once sealed they are shelf stable. They are not. Botulism is not your friend.

LOL Noreen talking about botulism and safe food practices? What a joke! Canning bread this way isn't safe long term, but maybe you should practice what you preach before you spout off on another persons channel. I've written on your videos several times about things that you have made or done that the USDA, FDA and the CDC find to be unsafe and you DELETED my comments! Peoples safety is only a concern for you when it doesn't get in the way of your pride. Hypocrite.
