Banana fritter. Simple and easy recipe for banana beignets. It takes less than 5 minutes to prepare the batter. Taste absolutely delicious.

Ingredients
100g Milk
1 Egg (egg that weighs 58-60g with shell)
2 Egg Yolks (from eggs that weigh 58-60g each with shell)
2g Salt
100g All Purpose Flour
2 Egg Whites
30g Sugar
Banana
Icing sugar or fine sugar for coating.
Vegetable or sun flower oil (temperature 180°C)

Just finished making these and had them. They were delicious. These were the best fritter coating I have come across. The egg whites give it such a light result compared to the ones with baking powder which were a failure when I tried them a long time ago. Thank you Michael Lim.

These look really good. I'll have to try making them. However, the reason your meringue was lumpy is because you over whipped it. You should stop before it gets to that point, because when you over whip it, it dries out, then it turns into lumps that are hard to mix into the mix. However, if you do over whip it, you can still fix it by adding another non whipped egg whites, and then re whip them. The recipe looks good though, and it was a good video 👍

I make banana fritters without eggs and they turn out excellent. In my humble opinion, I would not use eggs. I have no doubt that these must taste really good.
